Back on the wagon after losing 45 pounds, taking a break for maintenance and troubleshooting some bad habits, now halfway to my goal with 45 more pounds to go!

Recently, I've been really into marinating chicken breast with Greek yogurt and a bunch of spices and lemon juice. It's really flavorful, but keeps the fat really low. Sometimes though, after a few days, the chicken breasts feel a little bit boring and dry.

Today I air fried some zucchini that I scored with a grid pattern, spritzed with a tiny bit of avocado oil and added Salt and freshly cracked pepper on top. Air fried at 385° for 17 minutes. Then I popped that leftover chicken breast on top and added a slice of Colby jack cheese and some pickled jalapeños, and air fried it again for another three minutes. Dang it was delicious! And under 400 calories to boot.

You could probably do this with any veggie by just cooking it in the air fryer first and then popping the chicken breast or protein on top. I loved it!
