[Music] I’ve totally done it I’m eating out at some casual TexMex spot and then I hear it the fiery Sizzle of the fajita platter and I find myself rubbernecking just like everybody else in the restaurant to check it out and why because fajitas are fun and you’re fun too when you make them at home the fitas in this recipe are made with chicken breast so to add lots of flavor to this mild piece of chicken we like to marinate it before we cook grab a shallow dish and whisk together 13 cup coarsely chopped cilantro two finely chopped garlic cloves half a teaspoon of chili powder half a teaspoon of ground coriander half a teaspoon of ground cumin the juice of one lime and 2 tbsp of either Olive or vegetable oil add one pound of boneless skinless chicken breast to the dish and turn them to coat them all over in the marinade now you can set the dish aside and let them hang out for 10 minutes and then Grill them or you can cover the whole dish plastic wrap and stick it in the fridge to marinate for up to 24 hours if you can plant ahead you definitely should because the longer the chicken sits in the marinade the more flavor it’s going to have when you’re ready to make the fajitas grab a grill pan and heat it over medium once it’s hot put the chicken on the grill season it all over with salt and pepper and let it cook without bothering it until it’s nice and brown on the bottom about 10 minutes flip the chicken over season it again with salt and pepper and cook until the other side is brown and the chicken is completely cooked through about 10 minutes more when it’s done move the chicken to a cutting board Now setting the chicken aside like this gives it a chance to rest so that all of those flavorful juices that make the chicken moist have a chance to redistribute and they don’t run out all over when you cut into it and while the chicken’s resting you can Grill up your veggies and warm your tortillas you’ll need one red onion and one bell pepper any color you like now here’s an easy way to get even strips out of that awkwardly shaped vegetable first cut the top and bottom off the pepper then set it on one end and slice it it down the side lay the pepper down and work your knife along the inside to cut off the ribs seeds and core now the pepper is in a nice tidy rectangle that’s easy to slice for these fajitas you want to cut both the pepper and the onion into half in strips put the cut vegetables in a bowl season them with salt and pepper and toss them with one more tablespoon of oil then put the vegetables on the grill pan in an even layer and cook them giving them a stir every once in a while until they’re tender and lightly charred that should take about 10 minutes and since you’re tending to the veggies at the stove anyway you can warm up your tortillas heat a pan over high heat until it’s hot then put the tortillas in the pan one at a time and heat them on both sides until they’re soft and brown in spots wrap the tortillas in a clean dish towel to keep them warm while you finish cooking the vegetables and slicing the chicken slice the chicken into half2 inch thick pieces making sure that you’re cutting Against the Grain that way people aren’t gnarling on a piece of chicken that come sliding out of the tortilla in one big piece these grilled chicken fajitas are a festive and healthy way to Sur a Tex Mix inspired dinner the marinade has spicy flavors and lots of lime juice for zest and tang and the grilled chicken and veggies have a nice Char and that’s the easiest way to make grilled chicken [Music] fajitas

My one critique is that you should grill your chicken WITH the onions, it adds a much much better flavor to the chicken. Stick some onions underneath the chicken, on top, and around when grilling.
