Cooked the shoulder to 208f then shreded. Was so easy to shred. It was delicious.
Egg at about 275f-300f for the entire cook.

    Is there enough fat in a lamb shoulder to cook that long?

    This is the second time in the last couple weeks I’ve seen this cooked in this sub, I’m considering a Greek feast sometime soon.
