these pull apart chicken tacos are a fun and delicious dinner that you can eat with your hands my entire family loved these first I pressure cooked some chicken breast with a little bit of chicken broth and my homemade taco seasoning on high for 12 minutes I did a quick release and then transferred them to my mixing bowl and started shredding them with my kitchen aid this is the easiest way to shred chicken next I added in a block of cream cheese and a cup of my homemade salsa at this point I tasted it and I was like it needs something so I added in a can of diced green chili working with just one cut to carb flatbread at a time so that it doesn’t dry out add some of that chicken mixture to the end I added quite a bit and then roll it up tightly cut it into seven equal pieces and then repeat with three more flatbreads after you have them all cut you’re going to place them upright in a grease spring form pan now I’m feeding a family of six so if you don’t have that many people that are going to be eating this I would suggest just cutting the recipe in half and then putting it in a smaller spring form pan you can even just use a regular pie pan top it with some shredded cheese I used a mixture of mozzarella and kobby Jack and then bake it in the oven at 375 for 30 minutes

    This was a fun and different way to eat a taco and oh so delicious!! I always use my homemade taco seasoning which can be found on my page and in all of my cookbooks & meal plans. This recipe also calls for my homemade salsa which is also in my cookbook and meal plans.

    RECIPE – Makes 28 pieces
    INGREDIENTS:
    4 large chicken breasts
    1 cup chicken broth
    4 Tbsp homemade taco seasoning
    8 oz cream cheese
    1 cup homemade salsa
    4.5oz can of green chiles
    1/4 cup shredded Colby Jack cheese
    1/4 cup shredded mozzarella cheese
    4 Cutdacarb flatbreads

    DIRECTIONS:
    1. Pressure cook the chicken, broth and taco seasoning for 12 minutes on high.
    2. Do a quick release and then transfer the chicken to a mixer and shred it.
    3. Add in the cream cheese, green chiles and salsa and mix until combined.
    4. Working with just one flatbread at a time, lay it horizontally on a cutting board.
    5. Place 1/4 of the chicken mixture all along the edge closest to you.
    6. Roll it up tightly and then cut into 7 equal pieces. *If you place the rolls wrapped in Saran Wrap in the fridge for 20-30 min, they will cut easier.
    7. Repeat with the remaining flatbreads and chicken mixture.
    8. Grease a springform or pie pan and then place the pieces upright in the pan.
    9. Top with the shredded cheeses and bake for 20 minutes.
    10. Remove the outer layer of the springform pan and enjoy!
