all right everyone we’re here at the last leg of the meatloaf recipe relay I’m going to be sharing with you today my version of carnivore meatloaf and if you’re not familiar with this recipe relay it was started by Christy over at meeting wellness and she came up with the base recipe for carnivore meatloaf and then she challenged another YouTuber to take her base recipe and add something to it and there’s a few other rules like you could change the form if you wanted to like how we’re baking it but you had to add at least one additional carnivore item and then that person passed it down to the next person and the next person and we’ve had now a total of five awesome carnivore ladies who have come before me adding an ingredient and changing it up a little bit to make their own version of carnivore meat love so my challenge today is to take everything that’s been added so far and then do my little twist so we’re going to make carnivore meatloaf and mashed potatoes today today and I’ll link below in the description all of the videos that have come before me so you can go back in time and see how we got here but um so we started with Christy at meeting wellness and her base recipe for the carnivore meatloaf is was 2 lounds of 8020 ground beef 3/4 cup of pork rinded crumbs two eggs salt to taste and then we’re going to bake this in a 350° oven for about 55 minutes and she passed on the relay to Rhonda over at carnivore Leo again everybody’s linked below and she chose to add bacon to her recipe and then Rhonda passed the next part of The Challenge on to Aaron at Brewing Better Living and she chose to add cheddar cheese after Aaron it came to Ellie over at nourishment redacted and she changed the form of this from a loaf into meatballs and she also added cream cheese and and everybody’s meatloaf have been mouthwatering delicious looking and so these are all different vers that you guys can try if you want to you know put a little spin on your basic carnivore meatloaf recipe so after Ellie came Robin at carnivorous grandma and she just uploaded her video a couple days back and she changed the form back to a loaf and then she split her ground beef into one pound of ground beef and one pound of Italian sausage she also added some spices to hers and now it’s my turn so today what I have in front of me that I’m going to be using first off I have this pan I was going to I was originally going to do meatloaf muffins because I have these cute little silicone molds that I thought oh little individually portioned I don’t know why I’m kind of obsessed with that lately but I thought those would be fun to eat especially for my kiddo but then I saw Christy using this pan when she uploaded her video first and it’s this pan that comes in two pieces and it has the little drainage holes in the bottom so some of the fat drains out and then I thought that actually is going to help facilitate the thing that I’m adding today for my side dish the carnivore mashed potatoes and that would be a cool way to actually create these you know this side dish together so I went ahead and purchased the same pan that she used and got that here so I’m going to be using that today I have a pound of this is actually 73 uh whatever it is 27 um% fat ground beef I’ve been kind of leaning on that a little bit more lately and that’s also going to help me create my carnivore mashed potato side dish so you can use 8020 if you want you know use whatever ground beef you prefer and then I have my pound of Italian sausage to go off of robins Edition next I have these uh pork rind crumbs here that we crushed at home I think christe was using the um the pork and good pork Panko and that’s a great option um we just smashed ours at home if you have a three-year-old or a kid that likes to smash you can just put them in a bag and hand them off and they’ll take care of it for you I have my two eggs here I have some just pink Himalayan salt that’s what I have on hand and then I have my bacon which I have pre uh cooked just a little bit so that it’s kind of halfway done I picked up this tip from uh Robin’s video I believe she par baked her bacon and I think um when Rhonda added her bacon she metion that she broiled hers at the end so either way you want to do it is fine but I chose to just kind of pre-cook mine a little bit so it’ll crisp up really nice at the end then I have my shredded cheddar cheese I did buy this pre-shredded um since we smashed our own pork grinds I figured it would be okay to cheat and not shred my own cheese this time plus it was on sale and then I have some cream cheese cut into little blocks here that we’re going to stuff our meatloaf with and then I’m going to show you at the end how we’re going to make our mashed potatoes which is my addition to this I’m leaving out um any extra seasonings just because I don’t typically eat them and there is a little bit in the Italian sausage which my little one loves this type of sausage so I think this is going to be perfect for our family so let’s get started this is super easy we’re just going to dump our ingredients into this bowl and another tip um that I’ve picked up from picked up tips from all the ladies coming before me but we don’t want to like over mix this cuz if we smash it too much and mix it too hard it’ll get tougher and so I’m going to try not to like overly handle it until everything’s in here and so I’ve got some pork grind crumbs are’s about a half cup I’ve got my 2 lbs total of ground Meats my pork rinds I’m going to go with the salt here right now to kind of mix that into the pork grind crumble this is about a half spoon and my two [Music] eggs okay and let’s get our hands dirty and start mixing all this up again I’m going to try to just fold this kind of gently together here one thing I enjoyed about watching this relay progress through all all of the all the different ladies participating was that I kind of picked up like a cooking tip from each one of them so it wasn’t just about learning how to make the meatloaf it was like oh you could do it this way with your you know one ingredient or you know I kind of learned something from everybody and so that was fun too this was a really great idea from Christy and then that way anytime you have more ideas to you know change things up a little bit that can be really nice on this in this way of eating sometimes because you know sometimes you get a little pallet fatigue sometimes your kids are like Mom the same ground beef thing again so try Ellie’s meatball version instead or just try a bacon Extravaganza meatloaf or you know change it up however you like it to suit your family’s taste okay let’s wash [Music] up next thing is just to um start putting the meatloaf mixture here into the pan and then I’m going to like kind of fill it about halfway and then I’m going to add my cream cheese in here so we have like the stuffed cream cheese and I’m going to put the rest on top and sprinkle with some cheddar cheese and then I’m think I’m going to put the bacon on top should I do it that way or should I put the bacon first and then the cheese on at the end I think I think Aaron did it at the end if I remember right she like baked it and then she put the cheese on at the end so it wouldn’t burn maybe let’s do that and then we’ll see like kind of how the bacon crisps up too so all right let’s put in [Music] half Meatloaf’s always been one of my favorite meals it’s such a it’s one of those things I think of when I think of comfort foods and that’s why I wanted to make some carnivore mashed potatoes today because I mean meatloaf and mashed potatoes is there anything more comforting than that okay so I’ve kind of got my you see that just like about halfway full and then I’ve just cut these cream cheese like from the big block into little slices and I’m just going to kind of press them down okay so now I’m just going to continue covering this cream cheese I think this pan will come in handy for so many things too like think about all the different kinds of loafs you could make you could make I don’t know you can make all kinds of stuff in here and have like a little drain think we just going to collect your fat hint hint for your side dish hint hint so the the side dish I kind of stumbled upon accidentally and I love those things when I’m just like oh this tastes exactly like this other thing that I really like but it’s carnivore let’s call it this so I kind of I literally did just discover this by accident and then when this meatloaf challenge came around I thought oh my gosh it’s perfect this is a perfect addition so you’ll obviously have to try it and let me know you what you think but I tried it on Ben I asked like I didn’t tell them what I thought it tastes like I was like just close your eyes open your mouth and just taste this what does it taste like and the first thing he said was mashed potatoes and I was like yes so even cuz he eats most you know he eats a lot of meat but he’s not carnivore he’s in restaurants and you know he he likes to eat his treats and things like that so you know even to a a nonc carnivore palette he thought it tasted like mashed potatoes so I was like good that’s that’s what I thought I hope that it really tastes like that for everybody so all right we’ve got our meatloaf packed in here and see how that kind of fits perfectly so thanks christe for figuring that part out I didn’t have to do any of the measuring um so what did we decide we’re going to put the bacon on first oh and this is the other tip that I learned from Ellie she she cut her bacon into thinner strips when she wrapped her meatballs and I think that you know helped get it crispy and helped her get like better coverage around the the meatball which I thought thought about doing a weave but that might be be just too much should we try that though just to be fancy should we try like a little one of those crisscross weave [Music] things so I’ve got it kind of already just halfway cooked most of these some of these got a little bit more done but let’s try it just for just for Aesthetics just to make it look even more appetizing cuz sometimes that’s half your battle when selling this stuff to your kids too I mean I don’t know if I can’t sell meatloaf to kid I don’t know what I’m doing but if it looks really good that’s half the battle sometimes and smells good my 3-year-old she if I offer her something the first thing she does is smell it before she decides if she wants to try it and if she doesn’t think it smells good she’ll she’ll push it away and so I’m like I have to make these things really look nice and smell very appetizing for her to want to try them so you know sometimes kids push you into that creative zone right they force you to Branch out a little bit so you can get some of this stuff going okay let’s start right here I’m going put some strips I don’t this is going to work we’ll make some kind of pattern it’ll look pretty we could start a hashtag bacon art like meatloaf bacon art meatloaf bacon topper art #t bacon art # meatloaf weave art I think this is going to be good like this it’ll kind of help break it up on the slices here maybe I should have gone the other way see now I’m just I’m just second guessing myself we’re going to go with it just like that okay take a look at this see what you think all right so we got a full on o looks so good already and that’s going to drain out our fat so let’s take this over to the oven and we will I’ve got it preheated to 350 and so we’re just going to pop that baby in set our timer for 55 minutes you know what I’m going to go ahead and put 45 and then I’m going to check it then just to make sure the Bacon’s not burning and then we’ll add our cheese when we get there okay so while that’s getting started baking and I’m washing some of the stuff up I’ll tell you about the mashed potatoes so we were down in a BNB a few weeks back Ben was out of town training for work and we were down visiting him and I had brought a bunch of ground beef or bought a a bunch bought a bunch of bushel of ground beef to you know eat while we were down there well I made this big pan one night and he gets home late so I just left it kind of sitting in the pan with the lid on coming to room temperature and I would do this a lot with my ground beef that I would cook for myself but I would usually always like strain the most of the fat out of that fatty ground beef to store in this jar and so I’ve got this Jar full of of Tallow that I’m actually working on a video to show you what I’m going to be doing with that um but I would you know so then I kind of walk by grab some beef chunks every time I’m hungry and then I would like go add some butter to it if I wanted more fat something like that but this time I kind of left the whole thing sitting there all the fat and all the beef and the next morning I remember getting up and I was hungry and so I went to take a piece out and I kind of scooped just this room temperature Tallow that had just been sitting in the pan overnight and I went to eat it and it was a little bit salty because I added some salt and I stopped and I was like this tastes exactly like mashed potatoes because you know plain just plain white mashed potatoes almost have no flavor unless you add a bunch of butter and cream and salt and garlic and chives and all these things but if you’ve ever made just plain mashed potatoes that’s literally what this tasted like and the texture was perfect and so that’s what I was I was telling you I didn’t say anything and then I just took a scoop and I was like Ben try this what do you think this tastes like and he said mashed potatoes and I was like oh my gosh I’m so excited cuz I love mashed po Poes anybody seen my sad long healing Journey story you know when I got pregnant all I wanted was mashed potatoes cuz that’s one of my ultimate favorite comfort Foods is potatoes in general I’d always be like a chip person mashed potatoes all that that’s all I wanted for like the first six months basically so when I tasted this I was like it’s so similar it’s I could literally if you would have put that in front of me and not told me it was just Tallow I would not have known the difference and so that’s what we’re going to make today we’re going to let that fat and that’s why I got the extra fatty ground beef because I’m kind of like enjoying that now because I can take this beef that I cook and just let that all that towel that comes out come to room temperature and then I just scoop that onto my beef junks and it’s literally like eating meat and mashed potatoes and I freaking love it and it helps you it’s a really nice way to get more fat in too because it’s not that hot liquid rendered fat that can sometimes like give you the runs a little bit that’s what was I was kind of having an issue with too over the last couple you know few months that I’ve been adapting it’s like I would eat it too hot and then I would just feel kind of G afterwards but I can eat like loads of it this way it’s so good versus and cold I’m not even really the biggest fan because cold it almost tastes more beefy kind of more you know like you’re eating beef fat but this way I don’t know I’m just I’m so excited about it especially if you add spices to it if you added some garlic to your beef while you’re cooking some garlic powder or if you’re Kore and you add some onion or something you’re going to get that flavor I made some the other night and I put Italian seasoning in it for my kid and I tried the Tallow that was left over and it tasted like like a garlic Italian mashed potatoes and I was like I’m so happy right now this is the best thing ever I hope that this makes you think of mashed potatoes too but it’s a little bit tricky cuz you got to get it kind of right to room temperature so if your house is cold you might have to kind of like heat it up a little bit but you know it’s 75 in here right now and that’s perfect it doesn’t it’s not too soft it’s not too firm it just Scoops out and it like it pillows up upon itself I’m hoping I can get some good really good shots of it today because I’m telling you it’s really good so we’re going to let all that fat drain out into that pan then we’re going to let it sit and come to room temperature and that’s going to be our carnivore mashed potatoes it’s literally that easy you have your oven mitt yeah I have my oven M your oven mitt okay we got 45 seconds until we’re g to pop the sky open and see how we’re doing we’re going to add our cheese so let me grab the cheese put it right here hold the oven we hold the oven in your hands and we’ll open it just open yes we wait till the Beeper goes off and then we’ll open the oven and we’ll see how it looks you got I do I have my mittens and four 3 2 one so we’re going to open it and just stand back a little cuz it’s very hot you going to help me yeah okay now remember it’s going to be a big waft of heat okay so be prepared now mama’s going to thank you for your help you did you did you helped mama okay careful there we go push push push very good okay let’s take a look okay this is at 45 minutes sorry about my burner well I need to go get some more to clean these burners but this is starting to look really good see how much it’s shrunken away from the sides so we still need have 10 minutes left I think the bacon is definitely not not burnt not too crispy it’s looking perfect so we’re going to sprinkle we’re going to put like a bunch of cheese on top TR to just like make this [Music] cheeser okay 10 more minutes and then we may pop it under the broiler for a sec if we need to 55 minutes has now elapsed oh my gosh look at this puppy right look at that delicious meatloaf look at that delicious meatloaf what’s this what’s this meatloaf meatloaf what’s this on top cheese cheese and bacon all right so let’s bring this over here and we’re going to see how much fat we got out of [Music] this so what I’m going to do is strain this out so like the solid particles aren’t in there anymore and then we’re going to let that come to room temperature while we go to the park and we’re going to come back and Chow into this meat love look at how delicious that [Music] looks all right we just got back from the park and that was about 45 minutes it’s pretty chilly out so we only stayed for we stayed for a short amount of time so this this is still a little bit jiggly underneath but the top layer is perfect so I’m going to show you what it looks like first let’s slice into this bad boy oh look at how good this looks I put my cream cheese a little bit low look at [Music] that and then I want you to see this close up because I’m telling you the texture of this look at that what’s that look like mash so you see you want to just kind of get this to the right texture the right temperature which is going to give you that right texture so you can kind of see how it just Scoops itself up just like that and this because this has a little bit of pork fat in there from the the Italian sausage and then there’s a little bit of seasoning I already tried it it’s really good and look it looks so yummy so here it is we’ve got our final version of carnivore meatloaf with mashed potatoes I’m so hungry I’m so excited to eat and it’s cold out today colder than it’s been in a while so I’m excited to have a nice warm [Music] GL oh yeah that’s really good with the sausage in [Music] it I swear you guys this tastes just like mashed potatoes it’s so awesome the texture is perfect there’s a cream cheese this bacon back up there there yeah and these mashed potatoes they really have that flavor the saltiness the little bit of seasoning that was in the the sausage like they absorb it absorbs the flavors of anything that you use so yeah this is fantastic all right I’m gonna go eat a bunch of this and chill out for a little bit um thank you so much to Christy at meeting Wellness for issuing this challenge I think this was such a fun idea to get a bunch of us involved and get in the kitchen and share all YUM--hats off to you for this–never before have I considered eating the rendered fat when it has solidified I don't avoid the fatty juices after cooking ground beef/sausage, but other than bacon drippings which I use in cooking, I don''t outright chow down on spoonfuls of it either. I'll have to give this a try—since meatloaf ain't the same w/o mashed potatoes!

  13. Love this recipe Neah, looks delicious. Could make a bacon weave mat and roll the meatloaf into it. Love the tip regarding "mashed potatoes" too. I was getting massive potato cravings when you started talking about them. 😉

    Oven baked cheese on bacon, yum! My favorite cheddar cheese is Tillamook extra sharp.

    For anyone interested in the comment regarding mixing meat too much makes it tough, there is a great video on America's Test Kichen, Techniquly with Lan Lam, that goes into great detail regarding this subject.

    Highly recommended if one likes to make their own sausage, which I love fresh breakfast sausage made with fresh ground pork.

  14. I just pulled my meatloaf out of the oven. I'm going to be honest, it was a HUGE MISTAKE doing half ground beef and half Italian sausage. Not only did the ground sausage stink up my refrigerator right from the grocery store, it is now stinking up my house from cooking this recipe. It TASTES AWFUL, too!!! I won't be putting Italian sausage in or on anything ever again. Can't get the horrible taste out of my mouth. Have to eat the meatloaf regardless bc it's my carnivore meal for 2-3 days. Disappointed. Also, it was full of spices that are oxalate foods. I'm carb and oxalate free after experiencing excruciating pain for 4 weeks with oxalate detoxing/dumping. I don't know why I didn't think of that when I got the Italian sausage. Stupid me!! Lesson learned!!!
