Easy Perfect Kunafa Recipe, Crispy shredded pastry filled with a layer of ooey and gooey stretchy Mozarella Cheese nestled between a rose water scented Creamy Milk pudding that keeps the cheese from hardening even after it cools. A Rose and Orange blossom water scented sugar syrup is then poured on it garnished with crushed Pistachios making it a Beautiful Aromatic Middle Eastern Dessert.

A common story is that the dish was created, and prescribed by doctors, to satisfy the hunger ofย caliphs during Ramadan. So it’s the perfect dessert to serve during Ramadan โ˜ช๏ธ๐Ÿฅฐ

Cheese Kunafa

๐—œ๐—ก๐—š๐—ฅ๐—˜๐——๐—œ๐—˜๐—ก๐—ง๐—ฆ

230gm Kunafa dough
4 Tbsp powdered sugar
1/2 Cup | 100gm melted Ghee/Clarified Butter

Sugar syrup
3/4 Cup | 180gm Sugar
3/4 Cup | 180ml water
Few drops of Lemon juice
1 Tsp Rose water
1 Tsp Orange blossom water

Cream filling
1 Cup Cold Milk
2 Tbsp Cornstarch
2 Tbsp Sugar
1/2 Cup | 120ml Heavy whipping Cream
1 Tsp Rose water

9 inch mould
1 Tbsp Butter, softened
Orange food color few drops, optional

Pistachios
Green food color, optional

120gm shredded Mozzarella

๐Ÿ‘ฉโ€๐Ÿณ Prepare the Sugar syrup by heating Sugar and Water on Low Heat. Simmer for 5 mins. Add Lemon juice, Rose water and Orange Blossom water.

๐Ÿ‘ฉโ€๐Ÿณ Make the Cream Filling by mixing Cornstarch to Cold milk. Whisk well till no lumps.ย  Add Whipping Cream, Sugar and Rose Water. Cook & Stir till it becomes thick.

๐Ÿ‘ฉโ€๐Ÿณ Make Crushed Pistachios by soaking pistachios in hot water for 15mins. Remove the skin, strain and wash. Dry roast on low heat for 5 mins. Coarsely Chop them in a chopper. Mix with green food color. Dry roast again on low heat few minutes till dry. Keep refrigerated airtight.

๐Ÿ‘ฉโ€๐Ÿณ Make the Kunafa dough by cutting the dough into small strands. Mix powdered sugar, melted Ghee.

๐Ÿ‘ฉโ€๐Ÿณ Take a 9 inch baking tin. Grease it with 1 Tbsp room temperature butter mixed with orange food color. Layer with Kunafa dough, half of the cream filling, mozzarella & rest of the cream filling. Cover with Kunafa dough. Drizzle with Ghee.

๐Ÿ‘ฉโ€๐Ÿณ Bake at 200C for 25-30Mins or till Golden Brown. Drizzle with half of the sugar syrup while it’s hot. Reverse the side. Garnish with Pistachios.

Note: Authentic Kunafa uses only Akkawi or Nabulsi Cheese or String cheese (Dil Peyniri) which stays soft and stretchy even after cooling but rarely available, so instead Mozarella can be used along with a Cream layer which will keep the Mozarella from hardening after cooling and give almost same Cheesy texture.

Cheese Kunafa Sugar Syrup 3/4 Cup | 180gm Sugar 3/4 Cup | 180ml water Once dissolved, simmer for 5 Mins Simmer 5 Mins 1 Tsp Rose water 1 Tsp Orange blossom water Sugar Syrup is Ready! Let it cool down KUNAFA DOUGH 230gm Kunafa dough Cut into small pieces Separate the strands 4 Tbsp powdered sugar Mix Well 1/2 Cup | 100gm melted Ghee/Clarified Butter Mix the Ghee with each of the strands well CREAM FILLING 1 Cup Cold Milk 2 Tbsp Cornstarch Mix Well, Do not add to warm milk it will get lumpy 2 Tbsp Sugar 1/2 Cup | 120ml Whipping Cream 1 Tsp Rose water Keep Stirring till it becomes thick like a pudding Let it cool down GREEN PISTA POWDER Soak Pistachios in Hot Water for 15 Mins Remove the Skins Wash the Skin away Dry Roast on LOW Heat for 5 Mins Transfer them into a chopper Coarsely grind them GREEN FOOD COLOR, optional Mix it well before dry roasting it Dry Roast on LOW Heat till it gets dry Keep it Airtight Refrigerated ASSEMBLE 9 Inch Baking Tin 1 Tbsp Butter, softened Orange food color few drops, optional Spread it out Keep a raised border at the sides Press down to make it even Place half of the cream filling 120gm Mozzarella Cheese Place rest of the cream filling on top Spread it out to cover the Mozarella Cover with the Kunafa Dough Tuck the Sides inside Few drops of Ghee BAKE @200C 25-30 MINS Or Till Golden Brown Pour half of the Sugar Syrup while hot Pour Sugar Syrup The Prepared Pista Powder Dried Rose Petals
