First time using this method. It was a little dry. I was at 260° average temp. It fluctuated between 240°-300°. Will try 225° next time.

    i always do 225 on the smoker with pork ribs

    I find that baby backs will get done in 3-4hrs at 250-275 without wrapping, and St Louis will get done in about 4-6 at those temps.
