Homemade Corn Chowder
3-4 ears of corn (cooked)
2 – 2 1/2 TBS Butter
1 large onion (diced)
4-6 pieces of salt pork
2-3 TBS Flour
32 ounce chicken broth
2 cups water
3 Large Potatoes (dice)
black pepper
crushed red pepper (optional)
1 can cream corn
2 packets splenda or sugar (optional)
1/2 cup heavy cream

[Music] welcome to my kitchen today I will be making corn chowder so I have three ears of corn that I just boiled for about 10 minutes just going to take the kernels off them [Music] once you have it all off the carob you want to kind of break up any big pieces they break apart pretty easily so just kind of break them apart with your hands or if you wanted to you could use a knife okay I’m just going to set the corn aside and I have about two 2 and 1/2 tablespoons of butter that I’ve melted in My Pan to that I’m going to add one chopped onion if you like bigger chunks of onions you could leave them bigger and I have this about medium heat and I’m just going to sauté these and until they’re tender once my onions are soft I’m going to remove those you don’t need to get all all of them but most of them and then I’m going to add four pieces of salt pork and I’m going to cook those for about 4 minutes on each side until they’re pretty brown it’s been about 4 minutes I’m just going to flip my salt pork and you can see that it lets off a lot of juice grease flip them and let them cook for another four to five minutes once your salt pork is all brown I’m going to remove that and I’m going to add two and a 12 tablespoon of flour and you want to stir that until the flour is completely dissolved and scrape the bottom of your pan then I’m going to add 32 oz of chicken breath and at this point you want to turn your stove up to medium medium high because you want this to come to a boil I’m also going to add two cups of water and I’m going to add my onions back in and I’m going to add my salt pork back in also and just let that come up to a boil once your liquid just comes to a boil I’m going to add some potatoes I have three potatoes that I’ve diced up just going to add those and I’m going to add some black pepper you can add as much or as little as you like I’ll probably end up adding a little more at the very end and I also have some crushed red pepper this is optional it does give it a little little kick I just add a little tiny bit and give that a stir and I’m just going to let this simmer for about 10 to 15 minutes until my potatoes are tender once your potatoes are just about tender I’m going to add one can of cream corn and I’m going to add the corn from before and then I’m going to add a couple packets of Splender you could use sugar or you could leave it out completely we like it a little bit sweet and I’m just going to let that cook for about five minutes okay I have removed the salt pork and it is salty enough I just tasted it so I’m just going to add a little bit more black pepper and I’m going to add about a half a cup of heavy cream and give that a stir and I’m just going to let that cook for a couple more minutes to get the cream warmed up and it’ll be ready to serve okay it’s been just a few minutes and our corn chowder is done this is super easy to make I hope you give it a try we’re going to eat these with either crackers or grilled cheese please consider subscribing to our Channel and share with your family and friends who you think might enjoy thanks so much for watching we hope you’ll join us on the next one [Music]
