

Small back story. I recently got hired as a general manager at a smaller local cafe with the expectations that I better their coffee. I walked in knowing it was going to be a challenge but this was something I was really excited to take on. The current cafe that I do work at is a very strict cafe with a la marzocco and I have been blessed with in previous cafes having higher end machines. So, walking into this cafe with baristas that don't even dial in their espresso in the morning was a shock. But, I'm prepared to really train them into proper baristas!
Nowhere am I claiming to be the best either just a passionate barista 🙂
But, the espresso machine they have is a simonelli aurelia. The steam wands are go weak it's taking me almost 20 seconds to bring the milk up to temp and the wands have so much mobility too I'm struggling to keep the steam wand still while I steam. I'm looking for advice on how to adjust the steam wand or the pitcher.
There is possibility to upgrade to a better espresso machine soon. But step 1 is retraining baristas on how to properly steam milk so their lattes don't look like pancakes that need to be flipped.
