Fair to say I was sceptical about a risotto made of beans, but this dish from the team over at @boldbeanco8980 is a total knock-out 💪
Super quick to make compared to normal risotto, and absolutely packed with flavour!
Boldbeanco’s recipe and ingredients over on their website. I had a selection of different mushrooms to use up, so a slight tweak there, and obviously added a dash more Parmesan and olive oil than suggested for extra indulgence 🍽️💫
