First brisket ever. Also Maiden voyage for my new WSM. Any advice is appreciated.

    Looks great! Hoping to try a brisket on a KamadoJoe soon, I have done many on other types of smokers. I’m not trying to be an ass, just curious – why the gloves? Do you not like the texture of raw meat? Or because you don’t want to have to wash your hands?

    you trimmed the top too much. a little thicker fat cap so it maintain juicer out of the smoker.
