Tex-Mex Chicken & Rice Casserole

Ingredients:
1/2 chopped onion
1 tablespoon olive oil
1 6.9-ounce packaged chicken flavor rice and vermicelli
1 14-ounce can chicken broth
2 cups water
2 cups chopped cooked chicken
1 cup chopped tomatoes (2 medium)
3 tablespoons canned diced green chili peppers, drained
1 1/2 teaspoons chili powder
1 teaspoon dried basil, crushed
1/8 teaspoon ground cumin
1/2 cup shredded cheddar cheese.
In a saucepan cook onion in hot oil over medium heat until tender. Stir in rice and vermicelli (including the season packet); cook and stir for 2 minutes.
Stir in broth and water, bring to a boil, reduce heat and simmer covered for 7 minutes (liquid will not be fully absorbed)
Transfer the rice mixture to a large bowl and stir in remaining ingredients and salt/pepper to taste.
Transfer to a 2 quart casserole dish and bake, covered, for 25 minutes in a preheated 425°F oven.
Uncover casserole and sprinkle with cheese and let stand for 5 minutes or until cheese melts.

[Music] hi welcome to my kitchen this is our March collaboration with our Marching In with casseroles I love that because I love casseroles and Greg does this every March and this way I get some more casserole recipes and I love casserole recipes and today I am making a Tex-Mex chicken and rice casserole so let’s get started here we’re going to have let’s see I over 17 18 I don’t know different channels that’s going to be joining us so we’ve got a lot of great recipes coming so we’re going to make this one and hope everyone enjoys all of them I know I know you’re going to I just can’t wait because like I said I’m running out of casserole recipes and that’s something I dearly love so we’re going to have a lot of them this month and uh it’s something we’re all going to enjoy I’m going to print off all of them that’s for sure um first I’m going to take my let’s see I guess I don’t need to do my tomatoes quite yet but I need my onions I’m going to take my onions and so take a medium onion so I had this left from my last recipe so I’m just going to be using it now I’ve got my oven preheating at 4 25. so I’m going to start that when you first get ready to start making this so boy that’s been nice the last couple days here got a lot of stuff outside to do and when it’s like this you just don’t want to be in the house I was talking about gardening today and my husband said Vera it’s not time yet I’m like I know but I can’t stand it in the house when it’s nice out he said it’s not going to be nice tomorrow I said so what do I do sleep all day today and just wait for tomorrow and then it’ll be cold and I’ll be okay but anyway I like weather when get out in the yard and the flower beds and then the garden I’m ready to plant the garden so that I love I love to Garden you can just talked into Greg earlier he was showing me the picture of their Workshop I’m telling you I could live in that it’s got it all insulated and putting up the walls on the inside and I said that’s pretty fancy for a workshop he’s doing um he’s going like four foot or eight foot and then he’s putting um 4×4 in it in between the next board I’m like are you sure I’m like that’s really something I would just be happy with having the walls up and insulated but he wants it they want it all the wood and everything on the inside too so whatever they want just get it done and get that cabin put up he’s probably got the cabin put up not telling me so I won’t go down there and bug him I don’t know if he had that cabin put up he’d be jumping and screaming and everything else but that’s going to be put in real soon I know you can’t stand it without it it’s got to get that in so I can get his gardening in okay we’re going to put in our onion and our skillet here and get it sauteed some cut up some more of my onion yeah I guess I can cut up some more of my tomato oh I’ll be glad to get some good fresh home grown tomatoes boy go to the store now and they look good but they’re not but I guess we better be thankful for what we’re getting foreign I’m going to put my onion in the bowl with my um peppers because I’ll put them in at the same time I had three tablespoons of the um hot pepper only I didn’t use hot I used kind of a medium um so mild you can use hot if you want I use the mild rinse that off just a little bit okay look at that smells good I love the snow onions frying my grandson got a beef butchered and uh he said do you want any of them he called it anner’s and I didn’t know what he was talking about and I was talking to my friend Charlotte I said something to her and she said well doesn’t Bob like the liver and I said yeah she said that’s what he was talking about that stuff I said oh my goodness Bob will be mad at me so I called him and I said Joshua you’re talking about the liver and stuff and he said yeah I said I’ll take the liver Grandpa loves that and he goes oh you’re kidding I said no he loves liver and onions that’s something I don’t like but boy him and Greg do so I said I’ll take the liver so I guess I’m gonna do the liver fry it I like to smell liver and onions frying but I don’t like to eat it I’m going to look at my recipe here again I haven’t made this for a while okay I’m gonna foreign so I guess I’ll make that for my husband and then I am going to put in broth chicken broth it says 14 ounces and I had some canned and I didn’t have enough in the jar so I took some out of my chicken that I cooked okay I’m going to put that in and a pack of rice now I use the nor rice so I’m going to put that in there and stir that up real good and I’m going to let that cook now for about 20 minutes so I may not let it cook quite that long that’s what the recipe says but we’ll see how quick it Cooks and I’m going to cut up my chicken get rid of the rest of the onion but um I’m going to dice my chicken up you’re supposed to use two cups and I think this is pretty close foreign we’ve been having fires here the chicken farms we’ve had two of them big chicken farms have burnt and boy the price of chicken used to be great but it’s not anymore so a friend of mine went to buy their lay-in chickens and she said they liked and never found them and uh she said they finally found some but she said they’re kind of scarce so and then you put in two cups of water in this and then we’re just going to let it cook down now I’m going to have the recipe of course posted down below uh and if you have any questions about it just let us know and we’ll answer them but uh I’m sure it’s hard to follow me with the way I’m adding stuff in to get the recipe right there but um the recipe will be posted down below it all so so if you’re lucky enough to have chickens hang on to them well I’ll tell you four and five dollars and even six is a lot to pay for eggs my grandson told me the other day he says Grandma my chickens have started laying again he said I got five eggs he said that’s not much I said honey that beats none so I’ve got eggs in the freezer so I’m before I pay that I’ll start using them okay now there’s Alma chicken cut up well we want to get rid of this and wash my hands since I was handling that chicken excuse me I’m going to let that simmer for about I mean cook for about 20 minutes it’s got about 15 to go and then I’ll come back okay I think it’s ready I’m going to go ahead and transfer everything over now all your it won’t be completely dry when you do this and that’s okay we’re going to put oh that smells so good [Music] um yum yum yum yum yum yum okay I need oh about a tablespoon and a half of pepper and one and a half tablespoon of chili powder goes in it I’m putting one tablespoon I think one and a half would give me heartburn tonight so I’ll make it my own recipe and I’ll cut back on that a little bit that’s just it of anybody in the family don’t want it or don’t like it or health-wise health reasons just make it how you want it okay now my tomato and my green chili peppers that I cut up I’m going to add those to it now um boy that smells so good and then my basil I only need a eighth of a spoonful of basil and that’s probably a good thing because that was all I had set that there and I’ll remember to get some okay I needed uh let’s see chili powder I did how about um I did if I put my glasses on I’d remember which one that one was crushed basil I did basil cume um to make that’s why I said I’ll have this all written down below because I might forget something so and then I’m going to add my chicken now if you want to add turkey instead of chicken if somebody has turkey and they want to add turkey they can I I could have done that because I have plenty turkey that I can but I thought well I’m just gonna I got plenty of turkey turkey I can try to put them together and make one thing out of them yeah okay oh that smells so good um looks good too now I’m gonna put this in the oven and bake it for says 25 minutes at um 425 and I have a dish all prepared here that really looks good my daddy could eat chicken every meal I think and that’s something I can do almost my husband gets so aggravated at me because we’ll go somewhere where do you want chicken he’ll run out to get something and he’ll say what do you want I’ll say chicken I’ll say just get whatever you want and whatever you’re going for that restaurant has something for me you know what I ate I mean come on I can’t help it I know we went down to Kentucky one time and uh we stopped and got gas and it was early in the morning and he says he says I’m going to get a couple donuts and I says well go ahead and he says if I do that I won’t stop for breakfast because we’s on our way to Greg’s that’s when he lived in Florida now he’s in Tennessee I am so happy over that oh I’m just so happy that he’s in Tennessee and uh I don’t think I’m any happier than he is though he’s just he is so excited about being in Tennessee so anyway we stopped and he got gas and he got him a couple donuts and I think he got about six though and he got up there to pay and I said here’s mine he swatted got you some if I’d known you wanted him and I said he had one Donuts so we got in the car and he started eating and uh was on the highway and he started to eat and I think it’s yeah 20 minutes let me look and see 425 for 20 minutes yes so we’re driving down the road and he said he smelled and he goes what are you eating I said a chicken leg he says it is breakfast time I said I know and this is Kentucky Fried Chicken he said you are totally crazy and I said no I’m not you got what you wanted and now I got what I want so eat your Old rolls so anyway I’m going to put this in the oven and I’ll be back in about 20 minutes okay [Music] I am back and I’m telling you this is hot I don’t know if I can I don’t think I can dip it out it is that hot I just took it out of the oven um it’s still bubbling in the at the edges I don’t think so I might be able to I don’t know we’ll try what the heck we’ll try okay it could have been worse I could have dropped five pounds of flour on the floor okay we’re gonna try I’m just gonna try to take take it out like this and see if it won’t now what I did was I checked it and it was ready to come out almost so I sprinkled my cheese on it and set it back in the oven for about three minutes so that’s why we’ve got cheese on it now instead of me taking it out and putting cheese on it and then waiting and all that stuff okay we’re going to do it it’s going to go everywhere but that’s okay because I’m going to do it anyway there oh that smells so good and so spicy you know what I did is I put pepper on it in it too because I put pepper in anything I bet make I’ve got a terrible habit of doing that and I shouldn’t but I do and the recipe don’t really call for it but I put pepper in it so you can put pepper in it because I did it’s my dish so I made it my own so if you want pepper in it put it in it and if you don’t don’t but I did so anyway oh it smells so good but uh it says put a half a cup of cheese on it top of it and put it back in the oven so that’s what I did boy does that look good your rice and your peppers and your onion oh that smells so yummy and I’m gonna burn my mouth oh well I haven’t done that yet today so well I want that piece of tomato so I think I’ll do it today well we’ll see how good I can do it um oh um all of that is so good um oh my oh that is so good oh that chicken is even it tastes different than just the regular chicken oh that’s really really good I hope you try it because that is really good hmm that’s really a good dish that’s a dish to take to your in-laws or your kids or your Outlaws or you can take that anywhere or you can take that into the dining room sit down and eat it that’s really
