Chicken schnitzel
Check out my other video how to crumb and cook the schnitzel.

Parmigiana sauce
4 diced fresh tomatoes
4 cloves garlic
1 onion
Tomato paste concentrate ( I used 1 small tub)
1 tbsp Italian dried mixed herbs
Cook out juices and mash or blend ( I did both to demonstrate).
Salt and pepper to taste

Cheese
Mozzarella is the main cheese followed by grated fresh Parmesan.

Add continental parsley, soccer ball ham etc to suit.

Place onto a high shelf under the grill on high heat until cheese melts to your liking. About 4 mins for me. This ensures the chicken doesn’t dry out.

Serve and enjoy; you will love it.
