**Ingredients:**
For the falafel:
– 1 cup dried chickpeas, soaked overnight
– 1/2 large onion, roughly chopped
– 3 cloves garlic
– 1/4 cup fresh parsley, chopped
– 1/4 cup fresh cilantro, chopped
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/2 teaspoon baking powder
– Salt and pepper to taste
– Vegetable oil for frying
For the tzatziki sauce:
– 1 cup Greek yogurt
– 1/2 cucumber, peeled, seeded, and grated
– 1 tablespoon lemon juice
– 1 tablespoon fresh dill, chopped
– 1 clove garlic, minced
– Salt and pepper to taste
For assembling the wrap:
– Warm pita bread
– Crisp lettuce leaves
– Diced tomatoes
– Sliced onions
**Instructions:**
1. **Prepare the falafel mixture:**
– Drain the soaked chickpeas and pat them dry with a paper towel.
– In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is coarse and well combined, but not pureed.
2. **Shape the falafel:**
– Scoop about 2 tablespoons of the falafel mixture and shape it into a ball. Repeat with the remaining mixture.
– Heat vegetable oil in a deep skillet or fryer to 350°F (180°C).
– Carefully drop the falafel balls into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side. Remove from the oil and drain on paper towels.
3. **Make the tzatziki sauce:**
– In a small bowl, combine the Greek yogurt, grated cucumber, lemon juice, dill, minced garlic, salt, and pepper. Stir until well combined. Adjust seasoning to taste.
4. **Assemble the wrap:**
– Warm the pita bread in a toaster or microwave.
– Spread a generous spoonful of tzatziki sauce onto the center of each pita bread.
– Place a few falafel balls on top of the tzatziki sauce.
– Add crisp lettuce leaves, diced tomatoes, and sliced onions on top of the falafel.
– Drizzle with more tzatziki sauce if desired.
– Roll up the pita bread tightly around the filling to form a wrap.
– Serve immediately and enjoy your Falafel Wrap with Tzatziki Sauce!
