There’s no asian groceries around you, or even a standard grocery store with a small asian section? Bamboo shoots are a staple across much of Asia and are generally very available. You can definitely get cans on Amazon.
You can rehydrate it, then braise it in a seasoned liquid with soy, mirin, sake etc. This is kind of the opposite of how its made but you take what you can get if you aren’t in an area with Asian markets.
