I have been vegan for a while now and I have been super conflicted with my channel not being in alignment with my life and my beliefs
I am transitioning my channel/blog to align with my beliefs, I have been veg for 8+ years and have been in severe conflict here on my channel and when I owned my bakery by promoting the exploited animal industry, so I finally “got off the fence” and decided to stop being a hypocrite and follow my heart and soul passion.
I understand not everyone cares to be open to this kind of baking
(although I have been making some of my BEST recipes more recently!)
So I hope and wish that folks will be open minded and give me the same understanding for following my heart.
This has not been the case 100% so far, as I have sadly been met with anger and hatred
However others have been showing tremendous support and encouragement. I hope you will at least give it a chance. 🙂
I will not eliminate my old recipes and will still help you all with baking of any kind just like always!

[Music] hey guys Gretchen’s Bakery here um do I really have to say anything I mean just look at this fabulosity peanut butter cheesecake iced fudge stuffed cupcakes I really don’t know what else to say except you totally need these in your life like right now so let’s not waste any time and get right to the recipe first you will need the chocolate cupcakes and this is my all-time favorite recipe so you will need flour sugar C powder salt baking powder and soda boiling hot water vanilla extract flax meal and coconut oil as usual get the hot water combined with the flax meal then add the remaining boiled water to the cocoa powder add the coconut oil and the vanilla and then the thickened flax [Music] paste [Music] mix it all well and then add all the dry ingredients including the sugar and whisk smooth this is a simple One Bowl mix and another reason why I love it so much scoop the batter into paperlined cupcake molds and bake them while you prepare the fudge icing with confectioner sugar more cocoa powder corn syrup coconut oil vegan butter a little shortening vanilla extract and a simple syrup that I have made ahead of time you’re going to melt the coconut oil and then add that to the cocoa powder along with the simple syrup in a mixer bowl and mix it until it is a smooth paste add the shortening and then the corn syrup and then mix it smooth and then add the softened vegan butter the vanilla extract and last the confectioner [Music] sugar actually last you’re going to adjust the consistency with a little bit of cold water to your liking don’t add too much though because we do want this to be a stiff pipeable ice ing all right and next comes the peanut butter cheesecake icing recipe it’s basically a cream cheese icing made with peanut butter but let me tell you it tastes just like peanut butter cheesecake a very simple recipe to mix with vegan cream cheese confectioner sugar peanut butter and vanilla so just smooth out the cream cheese with the peanut butter and then add the confectioner sugar and vanilla extract and mix it till it’s just combined it’s really simple the key here though is to not over mix it or mix it too fast or you will have cream cheese soup get it to the refrigerator until the cupcakes have cooled and we are ready to ice once the cupcakes are cooled I am taking an apple core to hollow out the center since these are going to be fudge stuffed go ahead and fill the centers and you know me that would never be enough fudge filling so I decided to make a really tall swirl this way that peanut butter cheesecake icing has some to wrap its luscious self around chocolate fudge and peanut butter cheesecake icing these two are meant for each [Music] other now you could stop here but of course I have more chocolate up my sleeve in the way of ganache icing to pour all over these babies last a sprinkling of crushed peanuts and well I’ll say that this is perfection if there ever was such a thing grab a fork and dig right in seriously the most decadent cupcake you will ever have and so easy to make I promise these three recipes are so quick to make but the taste and look of them will have people thinking you were in the kitchen for hours I do hope you will try this recipe so head on over to Gretchen vgan bakery.com to grab the printable recipe if you liked this video please give me a like and don’t forget to hit that subscribe button so that you won’t miss a single recipe I do want to give a special thank you to my newest supporters in PayPal and patreon for helping me to continue Gretchen’s Bakery bring you the best free recipes on the internet if if you think you can help support me and my channel for as little as a dollar a month click the link below to find out how as always thank you to everyone for watching my videos and for visiting me on my blogs at Gretchen bakery.com and Gretchen vgan bakery.com you guys are seriously the best and I love that you are here with me each week all right that’s it for today I will see you soon until then Happy baking bye for now

  11. Okay, so I've been dying to make peanut butter cupcakes given all your recent recipes. I'm leaning toward making these for a small gathering, and they'll be great because one person is vegan. For some reason, maybe because sunflowers are so cool, I have it in my head that I want to pipe big sunflowers on top of these. Do you this peanut butter frosting will hold up if I pipe staggered petals using a leaf tip? I guess I'd use the fudge for the center, maybe just pipe or cover the center with vegan choc chips.
