I wish I had taken a better picture! But it tastes great. Its 804 calories for the entire thing and its easily two servings!
Add a little salt and pepper to chicken strips. Finely chop onion, cut carrot into julienne, cut spring onion at an angle and roughly chop iceburg lettuce (trust me)
Fry the chicken in a wok. If it sticks, add a splash of water and it'll behave. Take that out. Heat oil in a wok, (you could add 1 finely sliced garlic clove) and sauté the onions until transparent . Add carrots, cook for one minute, add the lettuce and sauté for half a minute.
Move to the side of the wok, add one beaten egg to the remaining part and let it cook for a bit. Then scramble and mix with the vegetables.
Add 1.5 tbsp soy sauce and half a tsp of white pepper. Stir. Toss in the white parts of the spring in. Add about one and half cup of cooked rice (preferably day old) and mix. Stir in a splash of vinegar and check for seasoning. I ended up adding a little more soy sauce. Garnish with green parts of the spring onion
