Creamy Roasted Chickpea and Spinach Dip
Ingredients:
• 1 can (15 oz) chickpeas, rinsed and drained
• 120g fresh spinach
• 1/2 cup grated Parmesan cheese
• 8 oz half and half
• 150g cheddar cheese
• Olive oil
• 3 cloves garlic (minced or chopped)
• 1/2 red onion (chopped)
• Habanero peppers, sliced
• Salt
• Universal seasoning
• Chives (fresh, chopped)
• Dill (fresh, chopped)
Instructions:
• Toss chickpeas with olive oil, potato seasoning, and salt. Roast in the oven or air fryer for about 6-7 minutes at 410°F until crispy.
• In a pan, sauté chopped garlic, chopped red onion, sliced habanero peppers, and spinach with olive oil until wilted. Pour in half and half, grated Parmesan, sweet chili, and seasonings (salt and universal seasoning), and stir until the spinach is coated. Add cheddar cheese and continue stirring until melted.
• In a bowl or deep plate, add the creamy spinach mixture.
• Add roasted chickpeas on top, sprinkle with chopped chives and dill.
• Serve the dip with a slice of toasted sourdough bread.
