INGREDIENTS
- 4 chicken breasts cut into bite-size pieces
- 1 tbsp olive oil
- 4 cups broccoli cut into bite-sized pieces
- 1 ½ cups cheddar cheese shredded, divided
- 1 can 10.5 ounces condensed cream of mushroom soup
- ⅔ cup cream cheese
- ½ cup vegetable stock low sodium
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp pepper
- 1 tsp salt
For Breadcrumb Topping
- 1/3 cup breadcrumbs or almond flour or parmesan cheese
- 1 tbsp butter melted
INSTRUCTIONS
- Preheat oven to 400°F (200°C) and grease a 9×13 dish.
- Heat 1 tbsp olive oil in a skillet over medium-high heat.
- Cut 4 chicken breasts into pieces, season with salt, pepper, paprika, onion powder, and garlic powder.
- Cook chicken for 10 minutes. Set aside.
- Microwave broccoli florets until tender-crisp, then drain.
- In a bowl, mix 1 cup cheddar, 10 ½ oz cream of mushroom soup, 2/3 cup cream cheese, 1/2 cup vegetable stock, and seasonings.
- Layer chicken and broccoli in the dish. Pour cheese mixture over.
- Top with 1/2 cup cheddar and buttered Panko bread crumbs.
- Bake for 20-22 minutes until bubbly. Cool slightly before serving. Enjoy!
