hello from 10B in Southwest Wales my name is Glenn from The Channel life of Glenn and you are watching Katy [Music] pic hello and welcome to ktie P now you know the drill I like to do simple recipes super tasty but they’re quick and they’re aford able and today I’m going to show you how to Jazz up your very own meatballs that’s right stop it sorry the oven’s just got a little jingle every now and then it’s nice until it cuts you off anyway so we are making meatballs today and then we’re going to go one step further and we’re going to make them in a Pata sauce but we’re going to Jazz that Pata up with a little bit of Katy pix touches and then we’re going to go another step further and we’re going to whack it in a chibata why because who doesn’t bloody love a meatball sub oh that was a bit threatening sorry who doesn’t love a meatball sub no I do I do you do let’s get started so in here I have 400 G of pork mints and 400 G of beef mints yes that’s right we’re mixing them today so much good flavor in these now don’t go for the low fat you don’t want to do it we want that fat we want that fat to help us bind to make them really nice and juicy and we want that fat to help us just just render out and make that sauce even richer too stop it into that we are going to put a handful of breadcrumbs we’re then going to add in one onion and that is going into our Bowl as well okay if anyone has any guidance on how to not cry when cutting onions let me know sh in the comments box below please do oh I really hope that you can pick up the noise of the oven going and that I don’t just look like I’m hearing voices shut up anyway now we’re going to go for a little bit of little bit of herbage uh beautiful I love I love love love getting if you’re making Burgers as well get fresh herbs into them they are just oh Rosemary and I’ve also got some time here you can also check in some oregano whatever you fancy I’m going to probably use about two stalks of Rosemary and then I’m going to use the same of some thyme as well give these a nice rough chop through cuz as much as they are lovely you don’t really want a mouthful and then our in you go and we are also going to go for the classic salt and pepper seasoning as well and then finally we’re going to Chuck in one egg so this egg is going to be used to bind our mixture I don’t like to use too much egg in mine personally cuz I do actually like I like them to hold together but I like when I cut into the meatball for it just to be like like it just just falls apart and all the meat’s just like yeah oh we having a great time you know you know shut up cake now before I get my hands dirty what I am going to do is put some oil into a pan on a medium to high heat once it’s warming up I’m going to take three cloves of garlic top of the ends take them out the skins and then I’m just going to use the widest bit of my knife pop that on top and I’m just going to press down just so you get that crunch sound oh did you hear that ready yeah you hear that great now that oil’s got nice and hot we don’t want it smoking but we just want it to get the heat drop that right back down to a lower temperature in fact I’m going to also move it off the heat for a second we’re going to pop our garlic into it it’s going to sizzle and frazzle a little bit we just going to let that garlic Infuse into your oil then we’re going to grab our mixture and get our hands dirty dirty and you just want to bind it all together so really good mush just get it get it all involved what you’re left with is you’ve got your really nice mixture you got your onions going through you got your fleckles of green through there as well and give my hands a quick Rush raw meat it’s not our friend that is going to go back on our heat now we’re going to remove that garlic back up to a high temperature what we want to do now is Seal our meat bows now when I say seal them I mean give them a really nice crispy outer shell we’re not worried at this point about them being cooked in the middle that’s that’s the next step so you just want to get them into a really hot pan frazzle the outside of them and then we move on to the pat don’t do it by our serum Katy pic do we do try to make them all the same size so they all cook at the same speed really helps so now we’re going to put in some Pata now yes yes fine I admit it I’ve got a jar of Pata what’s Difficult about that nothing and you know what you should grab yourself a jar of Pata too and then follow these very simple steps half a jar so 340 G straight into our hot pan oh I’m glad it’s my kitchen and not my mom’s cuz she’d be mad add in a really nice pinch of dried chili flakes also going to add in a pinch of paprika season this as well over the top of that we are going to add in two sprigs of fresh basil pop a lid on it and then this is going to go into an oven 200Β° for 10 minutes with that lid you’re going to create a lovely little steaming vacuum for you meatballs as well so they’ll cook all the way through they’ll stay really nice and juicy and we can plate up right it it’s been 10 minutes they are smelling amazing and oh yes beautiful it’s important when you are cooking that pat on the hob to begin with we bring it right down a little bit reduce it a little bit because it’s going to steam beautifully in the oven go lovely and Saucy again so don’t be scared if it does thicken up quite a bit Ah Yeah I’m going just finish it off with a nice little drizzle of that sauce over the top I’m going to sprinkle those as well with a cheeky bit of Parmesan Hey Katie, I usually rinse the knife with cold water halfway through or before I tear up helps a lot, but in most cases I man up and cry chopping,
drink water before chopping onions. And keep your tongue out while chopping them. The substance that makes you cry is attracted to moist places such as your eyes. Crying is your body's reaction to a "foreign body", so it's trying to get it out. Try that method. Or you know… just wash them after cutting them in half
I've heard that cutting the core of the onion will stop you from crying.
when you cut onions your nose receives some kind of weird… gas/thing from the onions. Try to not breath with your nose (like, inhale with your mouth and exhale with your nose)! I do that all the time and I cry a lot less :'D

Never cut off the root of the onion. Keep it on while Chopping and I promise you won't cry.

ONION! To keep onions from becoming a problem, peel and refrigerate at least 1 hour before you need to use said onion. Also make sure your knife is properly sharp. These are old school restaurant tricks. Please sind me the autographed copy of your swim suit calendar as a consultancy fee. Oh, wait, you don't have one. Haha. Blessings ChefMike
The best way to avoid tears while cutting an onion is having somene else do it. Boom, protip.

Put your onions in the refrigerator for 15-20mins before chopping.. BTW after watching that knife action of yours, am a bit scared so please don't kill me if the hack doesn't work π
i was wondering if you could do pork chops?, when ever i cook them they are dry and curl up or they are under cooked. love the meatballs.

I get REALLY teary when cutting onions. I try to cut quickly (which isn't too safe.. ha) I usually try to breathe deeply ONLY through my mouth. It helps quite a bit. Let me know if it works for you.

Onion tip/myth:
Put it in the freezer for a bit is one i've heard of. Another is not to cut the root first; that's where it's the stinkiest.
Wear contacts! It's one benefit to being blind as a bat that I can cut onions without any trouble
For not to cry while cutting onions you can 1) wash your knife every couple of seconds in very cold water or 2) chew bubble-gum:)) Many ppl say it helps! π

the sharper the blade the cleaner the cut meaning less cells broke when cutting the onion. I have heard dipping the onion in water before cutting helps.. to much hassle of you ask me.
Freezer for 15 to 20 minutes
Protip: pop your head in the freezer when you are crying because of the onions. It'll take the burn away.

You have to swipe the knife instead of pushing it down, so you don't squeeze the onion avoiding it to spray the juice!!!
best way to not cry at cutting onions? Don't get yourself emotionally attached…
peel the onion and soak it water for 1 minute that will dilute the sulfur in the onion. That will help.
Put water in your mouth while chopping onion, it really helps me and I do that every time I cut onions or spring onions. But I know people who say it doesn't work for them. What apparently works is biting into a piece of bread and letting it stick out of your mouth. It's said that the pores of the bread capture the gases from the onion that make you cry, I've never tried it though. Also, I've got a feeling that the bread will dissolve at some point in your mouth and that's gonna be disgusting…
And what also works is sitting when you're cutting onions, because then you're not directly over the fumes, but they rise in front of your face – it actually helps!
Also, open your window and when it gets too strong and stingy in your eyes, wash your hands – I find cold water works best.
