good day and welcome back to the channel I’m down at the Garden today and this basil is absolutely growing like crazy but we’re coming into winter so it’s going to start dying off you can see a few of the leaves are already stting to Brown I’m going to make the most of this and harvest it we’re going to go up to the kitchen and make a beautiful pesto pasta so I’m going to show how to do that but first we need to harvest this Basel so I’m going to cut most of it back as you can see there is heaps of it I’m probably only going to have to harvest a little bit oh it smells delicious so fragrant so we got a bowl of Basil there that’s plenty for a pesto maybe a little bit more and we’ll head up to the kitchen and make beautiful pesto pasta what am I do I’ve got heaps of this garlic chive I might actually pick a little bit of this as well and put that in our in our recipe so not too much maybe a handful there that’s plenty oh a bit more it’s going to be absolutely amazing for dinner tonight okay guys we’re up in the kitchen and we’re ready to start making our basil pesto so I’ve taken the Basel and I’ve um taken it off the stalks giving it a good wash got my garlic ches here so these are the ingredients we need there’s not a lot to it CLA of garlic your Basel your chives obviously some pine nuts which I have roasted now don’t roast them too much you don’t want to burn them so I’ve got about half a cup of pine nuts there and about just under a cup of Parmesan cheese need some extra virgin olive oil and just to finish it off I’ve got some crispy bacon here which I’m going to sprinkle on top of our pasta once we’re serving it up so all right let’s get started show you how to make basil pesto okay grab yourself your blender and you’re going to need a fair bit of olive oil maybe about a/ thir of a cup now you can always add more olive oil later if the um the pesto is too dry about so much clove of garlic goes in there and you’re going to blend that now make sure you blend your garlic and your oil first before you add your basil in there cuz it takes a a little bit of time to blend it up and your pine nuts you don’t want to overwork the Basel which will create heat and will destroy the beautiful flavor of the Basel so we’ll take that over and blend it up [Applause] we’re then going to add our pine nuts and blend that with the oil and the [Applause] garlic push all that down to the bottom CU we’re going to add our bzel and our parmesan cheese next okay so grab our Basel whack it all in there if you don’t like your pesto to be a stronger flavored you can add a bit of spinach with your Basel not really uh authentic but definitely can do that so we got our Basel we got our garlic CH in there now we got our parmesan cheese we’ll take that over and blend that up [Applause] we’ll have a quick look I think it’s going to need a little bit more oil yeah it’s looking pretty good but yeah we’ll need a bit more olive oil cuz we don’t want our pasta to be dry when we add this on there don’t be shy with the olive oil it’s good for you and tastes great there we go plenty of oil let’s give it another Blitz that’s our beautiful pesto now you may say that’s not cooked are you going to cook it before you add to the pasta absolutely not what we’re going to do is we’re going to mix this through our hot pasta we’re going to mix this through and that’s going to cook the basil and the pesto just enough so you don’t lose any of that flavor if you were to cook this now you would just lose a lot of that Basel flavor and the garlic flavor so we’re just going to cook our pasta and then we’ll serve up if you make a big batch of it you can keep it in the fridge for about a week okay our pasta is ready it’s nice and hot we’re going to add our pesto straight in there don’t be shy with it probably going to add about oh bit more than half of that and toss that through and that hot pasta now is cooking that Basel just enough so it still tastes fantastic now to serve little bit of that bacon on top and a bit more parmesan and there you have it beautiful homegrown home harvested basil pesto thanks for watching everyone I hope you enjoyed this video I’m going to get stuck into this cuz I’m starving I’ve been out in the garden doing lots of gardening today thanks for watching please remember to subscribe there’s lots of great videos of harvesting and cooking to come thanks again bye
