Mozzarella Pesto Baguette

Ingredients:
• 1 baguette
• Fresh Mozzarella
• Arugula
• Tomato
• Mayonnaise
• Sun-dried tomato pesto
• Salt
• Lemon pepper

Instructions:
• Preheat your oven to a medium-high temperature for toasting the sandwich.
• Cut the baguette in half horizontally to create the top and bottom parts of the sandwich.
• In a small bowl, mix mayonnaise and sun-dried tomato pesto together until well combined.
• Spread the mayo-pesto mixture evenly on both parts of the baguette.
• Layer fresh mozzarella slices on the bottom half of the baguette.
• Place the assembled sandwich on a baking sheet and toast it in the preheated oven (or use an air fryer) until the bread is golden and the cheese is melted.
• While the sandwich is toasting, slice the tomato and prepare the arugula.
• Once the sandwich is toasted, remove it from the oven.
• Layer the tomatoes on top of the mozzarella and sprinkle some salt and lemon pepper over the tomatoes. Add arugula on top of the tomatoes.
• Close the sandwich by placing the top half of the baguette over the filling.
• Cut the sandwich into smaller pieces for serving.
