This is going to be your new favorite dinner!! Tender cubes of chicken are roasted with feta and goat cheese. Tomatoes, olives and peppers. Then tossed with fresh pasta.

Ingredients::

2 boneless chicken breasts or thighs, cubed
One 3 oz pkg goat cheese with herbs
4 oz feta cheese
1 cup cherry tomatoes, halved
1/3 C pitted Kalamata olives
1/3 C chopped fire roasted peppers
1/4 C chopped sun dried tomatoes
1 1/2t Italian seasoning
1 t granulated garlic
1 12oz Pkg fresh linguine
1/2 C fresh basil
Salt and pepper to taste

hey everybody welcome back to my channel if you’re new here I’m so happy you stopped by do you ever just fix one of those dinners that you’re like it’s so good you can’t even believe it this is one of those dinners now you can call it several different things you can call it Mediterranean chicken pasta you can call it Greek chicken pasta but whatever you call it it is so flavorful it has calamada olives roasted red peppers sundried tomatoes and feta and goat cheese and it is just like a flavor explosion in your mouth and you can have this both hot or cold the next day as a salad and it’s so easy to throw together you just throw everything in a pan and bake it almost like a sheet pan dinner so stay tuned and I’ll show you exactly how easy this is to make here’s your bite Begin by preheating your oven to 400° take a large casserole dish and add in your cheese now this is for 4 oz of feta cheese crumbled and I’m also using 3 oz of this garlic herb goat cheese but now if you don’t like Feta or you don’t like goat cheese you can just use all of one kind now here I have two cut up chicken thighs but you can also use chicken breast and I just put some oil and a little um seasoning on them and I cut them up into small cubes and we’re just going to place those in our casserole I have 1 cup of of sliced cherry tomatoes 1/3 of a cup of calamada Olives pitted of course sliced 1/3 of a cup of uh roasted red peppers and about a/4 cup of chopped sundried tomatoes now you can leave any of these ingredients out if you like but they go really well together and then you’re going to give it a really good sprinkling of Italian seasoning I’d say about a teaspoon and a half then you’re going to drizzle it with 2 tbspoon of extra virgin olive oil and then you’re going to give it a nice sprinkling of granulated garlic now if you want to use fresh garlic you totally can but I just didn’t happen to have any so I’m using this granulated garlic now for the pasta I like to use fresh pasta but you can totally use the dried kind because this Cooks in 2 to 3 minutes so and looks like this I’m using the Linguini and um the last 5 minutes of my um stuff cooking I’m going to cook the pasta now this has been cooking for 30 minutes and then you’re just going to kind of mix it up a little bit and then drain your pasta and add it in there and then I’m also going to add a little handful of fresh basil now if you don’t have basil you can also use spinach it just kind of gives it a really nice flavor and color and then just keep stirring until all the sauce gets coated onto your pasta and this is what it will look like the smell is Heavenly it it smelled I can’t even describe the smell is so good look at that and the great thing about this is you can eat it hot or you can eat it cold as a salad the next day so I hope you guys are going to give this a try it was amazing both Chris and I could not get enough of it thank you so much for watching and we will see you on the next episode bye everybody

  1. Good morning Karen; another delicious recipe I need to try. I make pasta salad in the summer and this recipe is a great addition to my summer menu. Oh BYW; finally went to Costco…spent 2 hours there and found great deals. It was worth the 30 minute drive. Hope you’re doing well my friend.

  2. that's an amazing pasta idea, I always love chicken pasta! the chicken looks super flavourful and juicy! I just would omit the olives but everything else is just so fresh and inviting!
