Moroccan Roasted Carrot Salad:
1 Cup cooked brown rice
1 pound roasted carrots, peeled
sprinkle carrots with olive oil, 1 tsp chili powder, 1/4 tsp cinnamon and 1/4 tsp salt
Bake carrots at 400 degrees for 25 to 35 mins
Dressing:
1/4 cup olive oil
2 Tbl lemon juice
1 tsp honey or maple syrup
1 clove garlic minced
1/4 tsp salt
Top over arugula and Spinach

for [Music] [Music] hello and welcome back on this beautiful sunny warm spring day I thought I would take you through a day of homemaking and cooking from scratch for my family and share with you my secret to keeping it simple the day before I fed my sourdough starter and whipped together some sourdough English muffin dough I let it knead in my KitchenAid for about 5 minutes and then pit surround wrap on it and let it ferment on the counter for about 8 to 12 hours this has been sitting on the counter for 12 hours so it’s going to be a little bit sour full of flavor and you just wait for that dough to rise up and get nice and puffy and when I was rolling it out just now I made sure not to roll it completely flat but you want to leave some of that that lift in there so that they stay nice and fluffy and then I’m going to put them here on a sheet I’m loving this silicone matte it keeps everything nice and clean and I’m going to sprinkle it with some cornmeal and let these English muffins sit here on the counter for another hour and a half or so let them rise up a little bit they’re not going to rise up a whole lot but they’re going to kind of maintain that fluffiness and rise up slightly and I’m going to sprinkle them a little bit more with cornmeal you know my favorite Bak wear is from kih house.com and that’s where you you can find this silicone mat the cookie sheets the breakfast and you actually have seen me preparing lunch here I am grading my 12-year-old’s schoolwork and my life is a crazy Balancing Act between homeschooling three kids constantly carrying a baby on my hip who prefers to be in her mother’s arms than playing on the floor and is in fact taking a nap so I’m going to sneak outside and check on the garden and pick a few flowers that are in bloom and capture this moment I would love to tell you that my home is perfectly clean and that the yard is as tidy as I would like but AOSS it is not life is is less about having things complete at every moment in fact not everything is going to be done all the time while you are sweeping and mopping the kitchen floor the children will be building forts in the family room and taking all the cushions off the couches and sneaking gram crackers and creating crumbs in the couch as you are making a beautiful dinner for your family the kitchen will be getting dirty again I don’t know why we perceive that we need to have everything perfect all the time because it’s simply just not reality my grandmother gave me some wise advice when I was a young woman and I was dating and she said to date your future spouse with your eyes wide open but when you are married to love him with your eyes half closed and maybe we can apply that wise advice to homemaking as well and just keeping a home as we are learning how to keep a home we can keep our eyes wide open and take in as much as there is to learn know what it is to keep a clean home and what it should look like and to make those goals but as you’re raising children and going through the mundane process of life keep those eyes half squinted choose to focus in on the things that really matter let some of those things that don’t matter as much not bother you so much and coming from someone who can be a bit of a perfectionist at times this is much harder than it seems I asked a mother of seven one time how she kept everything together and managed her home and seven children and she told me that one day she made a choice that she could either keep the house perfectly clean and tidy and be a miserable grouchy mother or let some of those things go and have the house be a little bit of a mess but be a happy and kind mother and that seemed to be her way of coping I wonder if there’s a way to maintain a balance of an organized home and still be a happy cheerful mother [Music] I hope you enjoy this Tribute to Mother’s Day this is a song that my son Sydney wrote this week and it was his gift to me on Mother’s Day and he wanted to share it with all of you so happy Mother’s Day to all of you hardworking beautiful women whether you have children or not I’m jumping back into the kitchen and I put together some bacon on a sheet pan and cooked it in the oven at 400° for about 20 to 30 minutes I’m getting ready to make a little bit of a Sourdough English muffin sandwiches for lunch I like cooking these sourdough English muin on a cast iron skillet because it stays warm for a long time it does get hot really fast so you have to be careful about that once you get it up to a good temperature then you’re probably going to need to bring it down to a low medium temperature while the English muffin Cooks all the way through so just be sure of that cook it on low I did cook it with a lid on top just to be sure that the English muffins were cooked all the way through and that seemed to work just great I once read a study that said that it is actually impossible to multitask it is impossible to do two things at the same time that our minds can actually only accomplish one task at a time and I think what we think of as multitasking is just jumping back and forth between two tasks or maybe more but the danger of that is burning the English muffins while you’re sweeping the floor or dropping one thing and running to the other so instead of thinking of life as trying to do everything at once it’s helped me a lot lately to think of just being present in one moment at a time even though I am sweeping the floor and making English muffins and now I’m arranging FL and still making English muffins when it comes to doing homeschool with the children I try to just do home school with the children at that time or when I’m arranging flowers enjoy arranging the flowers in that moment and it helps me be a little bit more present when I think of tasks that way so I would say a secret to keeping it simple and balanced is being present in the moment when you’re with your kids and your family be with your kids in your family when you’re at work be at work and don’t worry about the laundry at home and I think you already know what my first secret to Simplicity is that I already shared with you today and overall that is dropping this whole idea of perfectionism that everything needs to be perfect and things need to be done all the time because not everything is going to be done all the time and it’s just too much pressure to think that things need to be perfect all the time so just start enjoying the beautiful things in life the beautiful flowers the beautiful Taste of good homemade food from scratch like bacon on homemade bread life is just too short this is my homemade sour Crut that I made with you guys not too long ago in a video I love the beautiful Rich purple color it’s a mix of green cabbage and purple cabbage has some caraway seeds and garlic so it’s very rich in flavor and I love the nutrients that’s also adding to our sandwiches today I’ll make sure to post that video down in the description box below if you want to follow that recipe as well I’ll also be sure to pin the recipe that I used for these English muffins down in the description box below but we mostly just put mayo and fried egg cheese bacon and sauerkraut on these and they were absolutely delicious this day of homemaking was interrupted with a trip to the vet I had to take my cats to the vet today and so that was the majority of the afternoon we also have meat chickens that we’ve been caring for for the past 6 weeks or so and they are just about ready to be processed and that’s been a learning experience this is our first time raising our own meat our goal is to raise more of our own meat and produce more of our own fruits and veggies here on our property and so this year we’ve put in quite a bit of new fruit trees we’ve planted a lot more berries we have a lot of veggies growing in the garden we have our potatoes and onions in and cucumbers and much more and we have a bunch bunch of tomatoes tomato starts that need to be planted this week as well so um we’re just constantly working at that goal of being more self-sufficient growing more of our own food and enjoying that process once the meat chickens were large enough we put them in with our egg laying hens in the chicken Co and we actually free-range our chickens so at night the chickens go into the C we lock the C and then in the daytime we un lock the coupe and they are free to roam out and it’s been nice to see those meat chickens eating bugs eating grass and I was thinking that this is what a Freer ranged chicken really looks like and it makes me so happy to think that those are going to be Sunday dinners soon um and how healthy and good those are going to be I’m making a roasted carrot salad for dinner to go with our grilled pork chops and I just put on some olive oil a little bit of a Sriracha um chili spice and some cinnamon and some salt and I’m roasting these carrots in the oven and they’re going to go over a bed of spinach and arugula salad so that’s going to be really delicious and I’m also putting together a kind of a lemon Deon mustard dressing to go over it this lemon dressing has one whole lemon juice and about 1/4 cup of olive oil a couple tablespoons of Deon mustard and I would say a couple cloves of diced garlic a tablespoon or so of Honey some salt and pepper and that’s about it it’s best if it’s marinated for a little bit of time before it’s put over the salad I’m also throwing in some raw walnuts with our roasted carrots I just love roasted walnuts and nuts and my salads when the days get warmer anything on the grill is a quick and easy healthy and delicious meal and I love throwing together any salads or or fresh sides to go with it my daughter prepared a fruit salad and I’m also putting in some leftover uh brown rice to go with our salad just making it nice and [Music] Hearty and this is going to be just a delicious fresh meal for for dinner was absolutely delicious and after dinner the kids and Jared all ran off to a baseball game and I put the baby to sleep and I found myself in an unusual situation and that was being alone and the house was completely quiet so instead of jumping right into cleaning up all the dishes and cleaning in the kitchen I decided to go out enjoy the evening put all the chickens back in the C get that closed up and enjoy this quiet moment I am not particularly good at self-care I don’t find myself alone very often and so I thought I would settle down and have a little cup of tea after I got all the chickens   7. It was really cute to see your pup come up and love on you as you were sitting on the porch. My dog does the same, things are usually a bit crazy and loud with everyone up and doing things…but when its quiet and can really get the love they jump at that time. Its so sweet. Glad you took that time to sit and admire the evening. That is actually my favorite time of day. Now with the time change behind us its so nice to see the sun going down and enjoy the sounds that the night brings in nature. Good to see another video!!!

  8. Your son is so talented! What a sweet song. After almost 49 trips around the Sun I have learned to be intentional. I really do try to pause and soak in all the moments. Negative and positive moments. Social media has many of us convinced that everything must be perfect. That results in focusing so much on the chores that we miss the really sweet stuff. With that said. It can be beautifully difficult to be intentional. My advice? Lean into moments of interaction. Be intentional. Take lots of deep breaths. You will never regret sharing moments with others. The dishes? The other chores? Of course those things still need to be done. But it’s ok to back burner them. ❤❤❤❤ thank you for taking on the mission of restoring families. ❤❤❤
