– peeled bananas frozen (ideally lightly speckled skin for the perfect ripeness) – Dark chocolate chips ( I like enjoylifefoods) – Dry roasted peanuts roughly chopped to liking – Just a smidge coconut oil to thin out chocolate (refined) – Flaky salt such as sel gris (@Celtic sea salt is my jam)
Directions:
1. Add a couple inches of water to a pot. Placing heat safe bowl over top. Turn heat on high to medium to get the water boiling, then you can lower to simmer once it gets going. The steam melts the chocolate.
2. Add in your chocolate chips and a little coconut oil to thin. Stir as needed, letting melt all the way down.
3. Meanwhile, set up a plate with some of the chopped peanuts on it. Also set aside a parchment lined baking sheet.
4. Add frozen banana to chocolate, tossing to coat until fully covered. Transfer to peanut plate, sprinkling more peanuts on top. Then a pinch of salt to liking.
5. Store in freezer and enjoy when you desire!!
Note:
– I like to let mine sit out for a few minutes before eating so itβs a little softer to eat.
