Serves 4
7 Syns per serving (deduct 7 Syns if using wholemeal pitta bread as a Healthy Extra ‘b’ choice.)
Low-calorie cooking spray
1 onion, finely chopped
3 garlic cloves, crushed
500g lean beef mince (5% fat or less)
½ tsp ground ginger
1 tsp ground cumin
¼ tsp ground cinnamon
1 tsp paprika
1 egg, lightly beaten
1 tbsp dried mixed herbs or dried parsley
4 x 60g wholemeal pitta breads
½ iceberg lettuce, leaves shredded
½ red onion, sliced
4 tomatoes, sliced
4 large gherkins, drained and sliced
For the dressing:
1 small garlic clove, crushed
200g fat-free-natural Greek yogurt
If you like, add 1 level tablespoon chilli sauce to your kebab for ½ Syn.
Spray a large, heavy-based non-stick saucepan with low-calorie cooking spray and put it over a low heat. Add the onion and cook for 12-15 minutes, stirring occasionally, until softened and lightly browned.
Transfer the onion to your food processor and add the garlic, beef, ginger, cumin, cinnamon, paprika, egg and dried herbs. Season lightly and blend until fairly smooth. Turn out into a bowl.
Spoon the mixture into a non-stick loaf tin (it should fill to a little over halfway up the tin) and pat down. Cover and chill for 4 hours, or overnight if there’s time.
When you’re ready to cook, preheat your oven to 180°C/fan 160°C/gas 4.
Cover the loaf tin with foil and bake for 1 hour 20 minutes. Remove from the oven and drain off any liquid, then return to the oven, uncovered, for 10-12 minutes. Leave the tin to rest for 12-15 minutes, then remove the doner meat and slice thinly.
Lightly toast and open up the pittas, then stir the garlic into the yogurt for the dressing.
Fill each pitta with the meat and some lettuce, red onion, tomatoes and gherkins. Serve 1 pitta per person with the remaining salad and yogurt dressing. Add a twist of black pepper to serve. If you like, add 1 level tablespoon chilli sauce to your kebab for ½ Syn.

We’ve given the king of the post-pub take-away a “fake-away” makeover. These Slimming World doner kebabs have all the taste and flavour of the real thing – but without the fat and calories. Start off by cooking the onion over a low heat for 12-15 minutes until soft and golden. Pop them in a food processor and add 3 garlic cloves and 500g lean minced beef or lamb. Don’t forget it needs to be 5% fat or less to be Free. Season and add the herbs and spices: ground ginger… cumin… cinnamon…paprika and a good tablespoon full of dried mixed herbs. Add a beaten egg and blend until fairly smooth and then spoon the mixture into a non-stick loaf tin and pat down. Cover and chill for 4 hours, or overnight if there’s time. When you’re ready to cook, cover the loaf tin with foil and bake in a moderate oven for around 40-50 minutes. Drain off any liquid, then return to the oven, uncovered, for 10-15 minutes to finish off. Cut the meat into thin slices and fill a toasted wholemeal pitta bread with salad and gherkins. Stir crushed garlic into fat-free natural Greek yogurt to make garlic sauce and serve straight away.
