I got the tonkotsu wavy noodles ramen

I hear a lot of people saying that Sara craft ramen is the best in melbourne, so I gave a try.

And sincerely, I didn't like a bit. It may be a bad day, but it wasn't good…

It's pork bkne broth, but it wasn't very emulsified. It wasn't creamy, but it was super thick. It was a bit weird, something in between a chintan and paitan. It was a bit too salty, a lot of soy sauce, but also had a lot of umami.

The aroma oil had onion, garlic and a lot a lot of ginger, which wasn pretty nice. But omg, there was so so much of it. It was super greasy and heavy

The noodles didn't feel like ramen noodles, it feels kinda elastic and soft. Super high hydration, and they probably use some type of starch like rice flour or tapioca starch

The toppings were pork belly chashu, which was delicious, but it the broth was so greasy that the fattiness of the pork belly just made worse. There was also a fried root that I'm not sure what it is but had a nice texture, but again, it's fried that just made the greasy mouth feel worse…

I had a side dish that I forgot to take photo, Wagyu sushi which was amazing. The rice was perfectly cooked, good acidity, good saltiness, umami, nice Wagyu, and a nice sauce. Very very tasty
