MOUTABAL – THE ROASTED EGGPLANT DIP

If you love rich, creamy dips bursting with flavor, you’re in for a treat. This Middle Eastern delight is not only delicious but also surprisingly easy to make.

Today I am going to show you how to make Moutabal – the roasted eggplant dip that we know as Baba Ganoush!

I’ve called this dip Baba Ganoush my entire life, only to recently discovered that its proper name is Moutabal.

The main difference between the two is that Moutabal includes tahini, while Baba Ganoush does not. Instead, Baba Ganoush mixes smoked eggplant with chopped onions, tomatoes, parsley, walnuts, and pomegranate molasses.

Recipe:
📝 Ingredients:
⭐️ 2 eggplants
⭐️ 2 garlic cloves
⭐️ 4-5 tbsp tahini
⭐️ 1 lemon
⭐️ 1 tsp ground cumin
⭐️ Salt and pepper

▶️ Instructions:
1. Prepare the Eggplants: Preheat the oven to 250°C (482°F) and set it to the grill function. Score each eggplant 2-3 times on each side with a knife. Place the eggplants on a baking tray and grill them until the skin darkens and the flesh becomes tender, approximately 30 minutes.
2. Cool and Peel: Remove the eggplants from the oven and place them in a covered saucepan to sweat and cool. This will make peeling the skin easier. Once cooled, peel the skin off and finely chop the flesh.
3. Mix the Ingredients: In a bowl, combine the tahini, grated garlic, ground cumin, salt, and the juice of the lemon. Stir until you have a thick mixture.
4. Combine and Season: Add the chopped eggplant to the tahini mixture and mix well. Taste and adjust the seasoning with more lemon juice or salt if needed.
5. Serve: Serve the Moutabbal with fresh veggies or pita bread for dipping.
