welcome back in this episode we cover how to make the classic authentic pesto sauce this sauce originates from Gena in the LI region in the Northwest part of Italy the ingredients are for tablespoons of pine nuts roasted or not 1 teaspoon sea salt two peeled garlic cloves for packed cups of sweet Italian basil thick stems removed half a cup extra virgin olive oil 3/4 cup parmesan cheese grated put the blender blade in the Deep Freeze for around 30 minutes to prevent the heat damaging the basil leaves first start by rinsing and drying your basil be gentle as you may damage the leaves and lose the flavor in the blender add the extra virgin olive oil now add the garlic and the pine nuts blend on maximum for 20 to 30 seconds now add the parmesan cheese and the basil leav leaves season with the salt and blend for another 20 to 30 seconds if the consistency is too thick add more olive oil if it is too thin add more basil and cheese store in a jar and cover the top with olive oil to prevent molding and oxidation store in the fridge thanks for joining us today until next time happy cooking
