I want to bring the word Cowabunga back and I’m going to use this platform to do it I’ve intently I’ve told either of you that somewhere to do list so I say cowabunga I’d really appreciate if it doesn’t get cut in this video we’re gonna show you how to make a chicken Caesar salad now you’ve probably had a chicken Caesar salad before might even know how to go at making one but this chicken Caesar salad is gonna be next level with this we are gonna cook the chicken in Rockbox so super quick stay super moist no dry chicken here no no and then we’re gonna make the most incredible croutons they’re gonna taste a bit like smoky bacon crisps but better a lot better definitely then we’re gonna make a really punchy dressing and we’re gonna do two things with the left as well so we’re gonna char half the lettuce in Rockbox and the other half we’re going to toss and dress at the table so there’s gonna be a big sherry Caesar salad it’s enough for four people it’s delicious you should definitely make it this weekend and let’s get going the first thing we’re gonna do is make our croutons you can use any bread you can use sliced white bread slice brown bread I’ve got some cheer batter here that was just knocking about gonna cover that with about half a tablespoon of oil and then I’m gonna add four brushes or streaky bacon that I’ve cut into lardons we’re gonna add a sprig of rosemary we’re just splitting off maybe just about and then I’m gonna add a couple of cloves of garlic that I’m just gonna split in half and add to the bowl toss that together and getting that into H right so once that’s all in there fold up get that into Rock box on a low flame for 15 minutes you can do it when Dropbox is coming up to temperature it’ll just take an extra 5 minutes or so and do remember to rotate it kind of halfway through while the croutons are cooking you can make your Caesar dressing you could make this a day before equally if you want it about 10 mils of red wine vinegar got one garlic clove got two anchovies keep them in because Joey’s are amazingly about you mommy flavor that is just it’s cowabunga so we’re gonna add one egg yolk and we got 2 teaspoons of Dijon mustard okay so this is all quite traditional for making a Caesar dressing really that’s what you’d normally expect to see we’re gonna add now is a lime a half a lime juiced in there and about 10 mil of water as well I’m gonna pop the lid off and we’re gonna add our oil gradually same as we make the mayonnaise [Music] cowabunga so we’ve added 150 mil of oil there 75 mil of olive oil 75 mil of sunflower oil good to mix your oils it’s just makes of dressing a bit more neutral and now we’re gonna add some pecorino cheese so this is another slight difference with the dressing normally this would be parmesan pecorino is just a bit more mild really allows the line to come through and give us that punchy zesty dressing and then that is it Caesar dressing done check your seasoning check on our croutons and then we’re nearly ready to make this out after about 15 minutes our croutons and our lardons will be ready so we’re gonna grab those out okay now these smell great you smell great you can smell the garlic sparrows me it’s for the bacon pop the croutons and the lardons into a bowl okay so next up we’re gonna cook some chicken so just gonna get a pan into rockbox quite often when you have breasts it just goes a bit dry but in rockbox we havein got that problem cuz we cook it so so fast okay so pan nice and hot toss this in a little bit of oil and give it a good season as well so once you eight oil in the seasoning on there give it good toss together so it’s nicely coated give your hands quick wash get your hot pan out and then we gonna get that chicken in okay so hot pan and chicken is going straight in and get that pan straight into a hot rod box sobic overcook the chicken 500 degrees centigrade or 900 degrees fahrenheit so after a couple of minutes we can give our chicken a quick turn about another minute or so back in once your chickens cooked that is looking beautiful nice and moist just gonna squeeze over a lime over the chicken and we’re gonna pop it out onto our board here when the Caesar salad was first made by a guy called Caesar Cardini in Mexico he used to dress the salad at the table it was a big sharing thing you’d order it for big parties you know four or more and the whole thing would be done with loads of theater all at the table so that’s something we’re going to try and do here as well so the chickens going to sit there and have a look rest may be gem lettuce here also known as cause lettuce you know why it’s called that because it is huh yeah because it sounds like so baby gem lettuce is beautiful it’s super super sweet and it’s super firm as well which lends itself so well to being cooked as well as being eaten raw we’re going to just rub these with a little bit of oil and just pop them heart side up into a hot pan from the quick season and they’re gonna go back into rock box still on a hot flame still 500 degrees half our cause is in here charring going beautiful darkening up getting nice and crispy cooked cause is one of the best things the other half of our baby Jim chopped here in a nice Bowl I’m gonna add to that some grated pecorino you’ve got a anchovy Phillips and then we’ve got our croutons our smoky bacon croutons and our bacon lardons and finally we’ve got our dressing CI dressings quite thick so you want to just spoon it over let a nice twist of black pepper and then we’re gonna give it a good toss together okay so in with both hands that ensures that every single bit of lettuce every single bit of cause every single anchovy is evenly coated in that delicious punchy dressing we don’t any cross-contamination so make sure your hands are thoroughly clean and dry the for dressing the salad I’ve cooked cause can now come over and we’re just gonna sprinkle over a little bit of pecorino anybody’s still warm and you can see he’s just started to soften up with the roux there that’s delicious that cook lettuce that is a Caesar salad to share for four people all cooked in rockbox okay and it’s delicious because we’ve got the chicken super super quick and rockbox kept it nice and moist we’ve made the most insanely good Caesar dressing my favorite Caesar dressing I’ve ever eaten the chard some of the cause there to give us a lovely texture and these croutons these smoky bacon croutons will blow your mind relax we promise
