Healthy & Tasty Mediterranean quinoa salad

To be honest, I don’t know if these are actually Mediterranean flavors, just had to name it something. This is one of the most refreshing, light yet filling salads you will ever have! My favorite part is the dressing.
I forgot to add pomegranate seeds but they’ll take this salad up another of yum. ALSO don’t skimp on lemon juice, this salad tastes best when tangy.
You need:
1/2 cup quinoa
2 medium cucumbers, diced
2 tomatoes, diced
1 medium onion, finely diced
1/2 cup boiled chickpeas
1/2 cup boiled corn kernels
1/3 cup pomegranate seeds
Generous handful coriander, chopped
3-4 sprigs mint leaves, chopped
2tbsp toasted walnut, chopped(optional)
DRESSING:
1/2 to 3/4 cup natural unsweetened yogurt
3-4 tbsp lemon juice
2 cloves garlic, crushed
1/2tsp paprika
Salt to taste
2tbsp olive oil (optional)
-Mix well.
In a pot, add 1 cup water to rinsed quinoa. Bring to a boil on medium flame, cover, lower the flame and let it cook for 10-15 minutes. Once the water dries, fluff the quinoa with a fork. Set aside.
Toss all the ingredient with the dressing. Let it sit for 15 minutes before serving.
