romaine lettuce
2 egg yolks
fresh lemon juice (squeeze 1/2 lemon)
1/8 tsp black pepper
1/4 tsp salt
2 – 3 shakes of worcestershire sauce (or anchovy paste)
2 cloves garlic (mashed into a paste)
1/4 cup olive oil
1/2 cup canola oil
Parmigiano Reggiano cheese

[Music] welcome to my kitchen today i will be making a caesar salad so the first thing i’m going to do is make my dressing so i have two cloves of garlic i’m going to slice those thinly and chop them into small pieces once you have them cut into small pieces you want to mash them with a fork or a spoon whatever works for you and you just want to keep mashing them down until you get like a paste consistency okay we have our garlic all pushed down and it’s a paste consistency so i’m just going to take that off the cutting board and put that in a bowl [Music] then i am going to take two egg yolks and the juice from a half a lemon i’ve cut the lemon in quarters i have two pieces just squeeze the lemon juice in there and then i am going to take a quarter teaspoon of salt and about an eighth of a teaspoon of black pepper and then you want to whisk your eggs until everything is well combined once that’s all combined we’re going to add our garlic and whisk that in [Music] then i have a quarter cup of olive oil and a half a cup of canola oil so i’m just going to add a little bit of the canola oil and you want to whisk continuously just put a little bit at a time and keep whisking and then i’m going to take some olive oil and alternate between the two of them and it might take a little while but just be patient and just add a little bit at a time [Music] if you add it all at once it tends to separate so just add a little at a time and i’m just gonna keep doing that until i get it all added in i am just going to add a little bit a couple dashes of worcestershire worcestershire sauce i am not using anchovies you can eat you can use anchovies if you like them um i prefer it without the anchovies and i’m just going to keep whisking this until all the oil is added okay so our dressing has thickened up [Music] i’m going to set that aside and i’m going to take one head of romaine lettuce and i am going to cut that into pieces [Applause] just kind of cut slits in it and then just chop it up okay so now we’re just going to add our dressing and i’m just going to drizzle it around the sides i’m not going to use all of it quite yet after i mix it we’ll see if we need more and you’re just going to toss that so that it all gets coated brush it against the sides and i’m just gonna bit more and then i’m just going to grate a little cheese i’m using parmesan red reggiani or whatever it’s called just going to grate some of that in there and then toss the cheese in and then i’m going to put it on a serving tray and then i’m going to take a potato peeler and just grate a little bit of this cheese on top and a little bit of black pepper and that’s it super easy to make i hope you enjoyed thanks so much for watching please like share and subscribe that would help me out a great deal and i will see you on the next one [Music]
