Ingredients
1 tsp olive oil 135g sirloin steak 1 onion sliced 110g mushrooms sliced 1 beef stock pot w/ 110ml boiling water 55g fat free yoghurt (fage 0%) 1 tsp dijon mustard 1 tsp wholegrain mustard 1/3 cup brown rice
Directions
1. Rinse brown rice and place in saucepan with 2/3 cup water, bring to a boil then cover and simmer 45 mins. Then rest for 10 mins off heat before serving. 2. Heat the oil in heavy based frying pan over high heat and sear the sliced beef until brown on all sides, remove and leave to the side with slotted spoon 3. Add the onion and fry for 3 minutes then add the mushrooms and fry for 5 further mins. 4. Add the stock and bring to a simmer for a few minutes. 5. Return the steak to the pan and cook for a couple of minutes. Remove from heat and add the yoghurt and mustard. 6. Serve the beef with the rice.
