It's only those 3 ingredients, turned out delicious! I imagine it would be more south Tyrolean authentic with spinach spätzle

    I used about 125g of spätzle, 40g of cheese, and about 45g of speck. I also used some pasta water to help melt the cheese (but maybe used a little too much). It had the perfect amount of speck but maybe I could have added more cheese or less pasta water.
