I made a salsa with guajillo and árbol chilis with tomatoes, onion, and garlic. I boiled everything and peeled the tomatoes. The finished salsa has these hard waxy skins in it and I’m wondering if anyone knows which chili they might be, and if there’s something I could do differently to keep them out of future batches. Thanks for any insights.

    Almost certainly the guajillo peppers.
    You can pull them after boiling/soaking, blend them and put through a fine mesh sieve… Kinda a PITA.
    You can also use a high powered blender, and blend the garlic and chillies into a smooth paste, then add tomatoes onion and pulse for desired chunkiness

    Guajillo vein or the hard part of the tomato by the stem. I’ve never encountered there and I’ve used all of these. As someone else said, you should try blending the peppers first with just enough liquid to cover them. This way they come in contact with the blades more, then add everything else

    I pass my sauce through a loose mesh strainer.
