    I’m on the Guga train with Picanha. They taste better just cooking them like steaks.

  2. I prefer the traditional Brazilian style where you put them on manual skewers, get the color and crust on the outside, then shave off some slices and put them back on the pit. This way you’re not really trying to cook them evenly, just produce some slices before putting the skewers back on. I did this two weeks ago and my guests said it was the best steak they have ever eaten.
