Those look bomb. Did you keep the two racks the same distance to the coals, and if so, did they cook evenly? I don’t have a slow n sear but will likely pick one up eventually.

I’ve done ribs before just dumping a ton of charcoal on one side and putting the ribs on the opposite side. Let it cook for 45 minutes and they came out great.
Then I tried it with the slow and sear and did it for 4 hours and idk, still tasted the same as the 45 minute maximum temperature cook.
