Some thing peaceful about getting a smoke going at midnight while the whole house is asleep. Started a 9 lb brisket about 12:20am and took off at 10am. Rested in the over until friends came over for bbq. Most of the burnt ends and moist portion had been taken before I could grab a pic. It was really tasty. Bonus Shotgun Shells as an appetizer.
