Low Cal Rotisserie Chicken Salad Recipe
I made a super delicious rotisserie chicken salad yesterday! Since I couldn’t find a recipe using the entire rotisserie chicken, I created my own. Here it is for anyone who wants to try it:
Ingredients:
- 1 Entire Costco Rotisserie Chicken (about 25.69 ounces or 1200 calories after removing skin and bones)
- 2 Cups Fage 0% Fat Greek Yogurt
- 2 Celery stalks (adjust to your preference)
- 2 Medium carrots
- Green onions (to taste)
- Grey Poupon Dijon mustard
- 5 teaspoons lemon juice (adjust to taste)
- Salt, pepper, garlic powder, Slap Ya Mama seasoning (to taste)
Nutrition for the entire recipe:
- **Calories: 1,522
- **Total Fat: 60.4 grams
- **Saturated Fat: 18.3 grams
- **Cholesterol: 427.7 mg
- **Sodium: 3,936.2 mg
- **Total Carbs: 37.8 grams
- **Fiber: 5.4 grams
- **Sugars: 24.5 grams
- **Protein: 213.8 grams
I usually split this salad into fourths and enjoy it with some low-calorie crackers like Blue Diamond Almond Nut Thins or Good Thins crackers, both of which are around 130 calories for 19 crackers.
