hello food lovers from around the world welcome to my channel where we cook together delicious International dishes who doesn’t love a good juicy rotisserie chicken that falls off the bone you can easily make it at home and I promise it will taste much better than the store bought one today we will Grill it over charcoal which gives it even more flavor but if you follow me I will post a version of it that can be cooked in your kitchen oven with no special tools except for a glass bottle but now let’s see what we will need for today’s project a fat chicken a mix of spices I use this pre-made rotisseri rub from Azure standard but I will leave it in the description box the ingredients some olive oil salted butter fresh Rosemary oregano margarum and a couple of garlic cloves I had this fresh herbs in my garden but you can use whichever ones you like or have on hand we Pat fry the chicken with some paper towels this will help the skin to turn out crispy after cooking now we are ready to make the infused butter which we will use to inject the chicken with this step is optional but it will result in a juicier more flavorful chicken I put a salted butter in a pot smash the garlic and roughly chop the [Music] herbs then bring everything to a boil on the stove it is best if you do this a couple of hours in advance so that the butter will have time to absorb all those nice flavors while cooling down I also added some pepper when that’s ready we allow it to come to room temperature meanwhile we start gently detaching the skin from the chicken we will rub some seasoning Under the Skin so it will penetrate the meat carefully we rubp small amounts Under the Skin being careful not to tear it as far as we can comfortably reach with our hand [Music] [Music] then we spray it with some olive oil and rub the skin with the spices as well if you guys like grilling then check out my other video where I made from scratch a full Mediterranean meal and grilled some amazing beef Kofa and chicken shisha I will link it in the description box we strain the butter so our syringe won’t clog but we reserve the herbs for later now weo small amounts in the breast legs and thighs trying again not to penetrate the skin so that the juices won’t come out from there [Music] if you guys like this video don’t forget to hit that subscribe button share it with your friends this will help the channel a lot we stuffed the herbs that we reserved inside of the chicken cavity now we place the chicken in the fridge uncovered overnight or for a few hours this will dry out the skin and result in crispier chicken in the end the fun part begins now the grilling I have the kamado Joe grill which I absolutely love I move around the charcoal that didn’t burn from the last time I grilled so so that all the ash falls through and then I arrange a small amount of charcoal towards the back of the grill this way when the fat will drop it won’t create flare ups and burn the chicken we light the charcoal and wait for it to catch on fire I had to learn patience with this Grill but the result it’s worth the wait [Music] the charcoal is ready now I close the Dome so that it will get hot too and cook our chicken from above like an oven would more waiting [Music] the grill reached 350° so we are ready for the next [Music] step which is setting up the roer attachment it needs to be plugged to rotate so I have an extension cord for that measure where the chicken will be centered and then we try our best to fit the chicken in a way that its wings and legs are secured so they won’t flop around this is much easier said than [Music] done put the chicken in turn the machine on close the lid and forget about it for at least an hour low and slow is what we want meanwhile we can prepare our side and the salad I made some buttered potatoes and a delicious libanese fatou salad I have the recipe already on my channel so I will link that as well it’s starting to look good but far from being done it was raining nicely and quietly that day so I enjoyed my time out on the patio grilling and wanted to share this moment with you I love rainy days the chicken is getting closer to being done so we need to start checking the [Music] temperature it will be ready when the breast will read 165 F or 74° c almost there a little later and we reached our Target so it is time to remove it from the stakes carefully so it won’t break it looks and smells amazing [Music] [Music] now let’s see if we did a good job and if it is soft and [Music] tender oh the bone just came out so that’s a good sign the skin is nice and crispy the breast is cooked all the way through but that butter kept it nice and [Music] juicy The Taste is absolutely Divine the Smokey flavor from the charcoal the
