INGREDIENTS
· 1 yellow bell pepper
· 1/4 cucumber
· 150g cocktail tomatoes (5 oz)
· 1 red onion
· 100g feta cheese (3.5 oz)
· 90g kalamata olives (3 oz)
· 2 tbsp olive oil
· 1 tbsp lemon juice
· 1/2 tbsp white wine vinegar
· fresh oregano, salt & pepper to taste
INSTRUCTIONS
1. Wash and dry the bell pepper, cucumber, and tomatoes.
2. Core and roughly chop the bell pepper and cucumber. Quarter the cherry tomatoes, peel and thinly slice the onion, and halve the olives. Add everything to a large salad bowl.
3. In a small bowl, mix together the dressing ingredients: olive oil, lemon juice, salt, and pepper. Tear the fresh oregano leaves and add them to the dressing.
4. Pour the dressing over the vegetables and toss well. Crumble feta cheese over the top, give it another mix, and serve.

in our home we constantly crave the salad during summer season and to make it I roughly chop yellow bell pepper cucumber Tomatoes red onion and camada olives and they get married with olive oil lemon juice a dash of white wine vinegar salt pepper and fresh oregano and to finish it off I top everything with some FedEd cheese and voila summer in a bowl
