Bacon-Wrapped jalapeno poppers for camping this weekend.
Stuffed with cream cheese, diced jalapenos (from the tops I shaved off), Chipotle peppers in adobo sauce, cheddar cheese, and sweet Italian sausage. Spiced with cumin, paprika, Cayenne, garlic.
I tried something different this time, where instead of slicing the peppers in half, down the middle of the long way to make little boats, I just sliced the top 1/4 of the pepper along the long side, to make a nice deep canoe rather than a shallow boat. Allows for more filling and less spillage. Smoked them for 2 hours at 225 and 2 hours at 275.
Now I'm going to let them cool down and put them in the fridge to take camping tomorrow and reheat on the grill.

I make these in my air fryer. I never thought about smoking them.
Looks great! I have a bunch of jalapeno’s and will be doing the same thing this weekend.
I’d definitely get through like half of those before reaching the camp site
