How to Make Quinoa risotto with vegetables Recipe :
Ingredients :
400 g Quinoa
100 g freshly grated Parmesan
1 l Vegetable broth
Olive oil: 2 tbsp. soup
2 Tbsp Chopped fresh parsley
1 Spoon Curry powder
Salt
Pepper
Step 1: Cook the green beans for 8 minutes in boiling salted water.
Drain and cut them into cubes.
Step 2: In a saucepan, heat the olive oil and add the quinoa and curry.
Cook for 1 minute. Pour in a little hot vegetable stock and mix.
Step 3: As soon as it is absorbed, pour a little more and cook for 7 minutes.
Add a little more broth and continue like this until the quinoa is cooked (around 20 minutes in total depending on the quinoa).
Step 4: Mix the parmesan into the quinoa then add the green beans and fresh parsley. Serve immediately.
