    Dry brined for 6 hours or so, then rubbed w/ some olive oil, garlic powder and coarse pepper. Smoked at 200-225 until around 120 internal temp.. Let it rest while I cranked the heat and opened the sear plate. Sear all over and rest w/ some butter on top for 10 mins. Screw a steakhouse..

    Tri tip has become my favorite thing to smoke, when you do it perfect it’s almost like a prime rib texture
