These almonds cookies are gluten-free and dairy-free with their almond flour base. Crispy and chewy on the outside and soft inside! My favorite cookies!

Ingredients
2 large eggs room temp
1/2 cup sugar-100 g
1 teaspoon vanilla extract-5 ml
1 teaspoon baking powder- 5 g
2 1/2 cups almonds flour -250 g
1/4 cup powdered sugar-25 g
Directions:
Preheat oven to 325 degrees. Line a baking sheet with parchment.
In a large bowl, whisk together eggs, sugar and vanilla extract. Add almonds flour and baking powder and mix until is combined. Put the dough in the fridge for 1 hour.
Use a 1 tablespoon cookie scoop to scoop and roll 16 cookie dough balls and form little pears and put a clove on top. The dough will be quite sticky. Place the cookies on a parchment-lined baking sheet and bake for 16-18 minutes until the cookies are just set. The cookies will be soft. Roll each dough ball in a small bowl of powdered sugar to completely cover the outside.
Allow the cookies to cool on the baking sheet for about 15 minutes.
Storage Instructions: Cooled cookies will keep well in an air-tight container at room temperature for up to 10 days.
Freezing Instructions: Cooled cookies can be frozen in a freezer-safe container for up to 2 months.
