Please help me identify this sashimi which had a strong flavor that I could not handle. Kind of… gamey if that’s possible for fish lol. It’s a dark maroon color.

It’s katsuo in Japanese, skip jack tuna or bonito in English. Usually it’s smoked over hay or straw. It should be served fresh, unlike other tuna’s that do well with aging. Great with scallions, ginger, or karashi mustard or onion ponzu.

Seared Katsuo (tataki) goes very well with soy sauce and ample amounts of freshly grated ginger.
