How to Cook Rice, Legumes, and Vegetables Together?

Ingredients for Rice, Lentils, and Chickpeas:

• 1 cup rice
• 2 cups water
• 1/2 cup lentils
• 1/2 teaspoon salt
• 2 cups cooked chickpeas
• 1 tablespoon red chili powder (I used very hot chili)
• 1 teaspoon salt
• 1 tablespoon olive oil
• 2 tablespoons olive oil
• Salt and black pepper to taste
• 1 teaspoon cumin

Instructions:

1. Rinse the rice and lentils well and soak them in water for 30 minutes.
2. Drain the rice and lentils, then add them to a pot with 2 cups of water and 1/2 teaspoon of salt. Bring to a boil, then reduce the heat and simmer for 20-30 minutes until cooked.
3. In a bowl, mix the cooked chickpeas with red chili powder, 1 teaspoon of salt, and 1 tablespoon of olive oil. Spread the chickpeas on a baking sheet and roast in a preheated oven at 180°C (350°F) for 20 minutes until crispy.

Salad Ingredients:

• 1/2 cup red onion, diced
• 2 cups cucumber, diced
• 1/2 cup tomatoes, diced
• 1/3 cup chopped parsley
• Roasted chickpeas (from above)

Salad Dressing Ingredients:

• 3 tablespoons olive oil
• 1/2 teaspoon salt
• 1 teaspoon red chili powder
• 1 teaspoon black pepper
• 1 teaspoon sumac
• 1/2 teaspoon garlic powder
• 2 tablespoons lemon juice

Instructions:

1. Allow the roasted chickpeas to cool and then add them to the salad.
2. In a small bowl, whisk together the ingredients for the dressing.
3. Pour the dressing over the salad and toss to combine.

This recipe should guide you through making a delicious meal with rice, lentils, and chickpeas along with a fresh salad and flavorful dressing.
