– 2 eggplants (1050g), cut lengthwise, scored – 1 block extra-firm tofu, cut into eighths – 3T mirin – 3T sake -1/4c swerve or sweetener of choice – 100g red miso
Rice: – 1 12oz bag of frozen riced cauliflower – 1/4 diced white onion – 4.5oz edamame, shelled – 2T shoyu or soy sauce – 100g cooked chicken breast, diced
Heat broiler, spread eggplant, cut side up, and tofu on a rimmed dish, spray with cooking spray, broil 5 min. Mix mirin, sake, miso and sweetener in a bowl. After eggplant is starting to brown, spread miso over the tops of eggplant and tofu slices, broil 5 min longer.
For rice, place steamed cauli rice in a wok on med-high heat, stir fry 2 min, then add remaining ingredients and heat through. Top with scallions.
