Ingredients:
* 1 lb. of Sea Bass
* 1 lb. of Baby Spinach
* 12 – 14 Cherry Tomatoes
* 1 ½ tsp. Lemon Zest
* 1½ tbsp. Lemon Juice
* 2 Cloves Garlic
* 2 tbsp. Butter
* ¼ tsp. Thyme
* 2 – 3 tbsp. of Vito and Joe’s Olive Oil
* “Pinch” of Salt
* “Pinch” of Ground Pepper
How to Prepare
1. Bring the fish to room temperature
2. Cut the Tomatoes in halves
3. Cut the Garlic into thin slices
4. In a medium size frying pan, on medium heat add Vito and Joe’s Olive Oil, Tomatoes and Garlic, then stir
5. Zest the lemon, then cut it in half for lemon juice
6. When the Tomatoes and Garlic are soft, add in Salt, Pepper and a hint of Thyme
7. Add 1tbsp. of Butter
8. Add Lemon Zest
9. When Butter melts, add Spinach then cover
10. Put a cast iron pan on medium heat
11. “Lightly drizzle” Vito and Joe’s Olive Oil on Sea Bass
12. Salt, Pepper and Thyme both sides of Sea Bass
13. When Spinach is done and cooked down remove from heat, stir and recover
14. In the cast iron pan, put a tbsp. of Vito and Joe’s Olive Oil, Place the skin side of the Sea Bass down first
15. After 2 minutes flip the fish over
16. When the Sea Bass is almost done, add Butter and Lemon Juice directly on the Sea Bass
17. To prep the plate, put the Tomatoes and Spinach down
18. Place the Sea Bass directly on top of the Tomatoes and Spinach
19. Drizzle a little bit of juice from the Sea Bass on top

okay first thing we want to get going is our tomatoes so I’m going to cut them right in half I’m going use two cloves of garlic so I’m just going to peel this garlic and then I want to slice it up nice and thin I got medium Heat going I’m going to take some of my veto and Joe’s best olive oil I’m going to put about 2 to 3 tablespoons now gently I’m going to put my tomatoes in next I’m going to put my garlic in I’ve got about a teaspoon and a half of zest now what I’m going to do is cut that lemon in half and I want about a tablespoon and a half of lemon juice use about half of a teaspoon of my salt I’m going to take about half a teaspoon of freshly ground pepper just a pin of the time I’m going to take my tablespoon of butter and I’m going to take all my lemon zest and then just give it a nice stir spinach is in let’s prep the fish first thing I’m going to take some veto and gel’s olive oil I’m going to just do a nice light drizzle right over the top of the fish we going to use some salt I’m going to use some pepper and then I’m going to use some of our time pan so here we go right in our pan it’s been about 2 minutes I’m going to turn that over look at that so right when you got about a minute left I’m going to put my butter and my lemon juice I’m just going to put it right over the plate oh take a little bit of that juice and just drizzle that right over the top
