I put it away clean. I thought it was cracked at first, but this residue wiped off with my fingers. Must have built up over a couple month, I have no idea what this is.

That’s a dead crock pot. The glaze has started crazing, at best you are eating something quite unhealthy if you keep using it, at worse that’s some yummy bacteria.
